- Derleme MakaleAçık Erişim2025Scopus SJRQ1Using synthetic biology to understand the gut-brain axis
Cesaro, Angela; Broset, Esther; Salimando, Gregory J.; Oztekin, Sebahat; Mai, David; Bennett, Mariko L.; de la Fuente-nunez, Cesar
Extensive research supports a pivotal role for the gut-brain axis(i.e., the communication pathway between the bacteria in the gut and the brain) in brain health and disease. The interplay between the gut microbiota and the mammalian nervous system appears to shape both adaptive and dysfunctional neurological processes, as it directly affects neurons and neural signaling, the immune response, and metabolism via its effects on hormones, neuropeptides, and neurotransmitters. This review summarizes key findings from the recent literature focused on the interactions between neurons and gut bacteria. By focusing on synthetic biology tools currently employed to study the gut-brain axis, we can enhance our understanding of neuroactive substances released in the gut and potentially identify select molecular candidates that may facilitate the development of personalized therapies.

Due to the changing consumer lifestyles, the tendency to adopt foods that require less preparation time and offer both variety and convenience has played a significant role in the development of the frozen food industry. Freezing is one of the fundamental food preservation techniques, as it maintains high product quality. Freezing reduces chemical and enzymatic reactions, lowers water activity, and prevents microbial growth, thereby extending the shelf life of foods. The freezing and thawing procedures directly impact the quality of frozen foods. The degree of tissue damage is determined by the freezing rate and the structure of the ice crystals that form during the freezing process. Generally, thawing occurs more slowly than freezing. During thawing, microorganisms, as well as chemical and physical changes, can cause nutrient damage. Thus, the goal of this review is to identify innovative and optimal thawing strategies. In order to save energy and/or improve quality, new chemical and physical thawing aids are being developed alongside emerging techniques such as microwave-assisted, ohmic-assisted, high pressure, acoustic thawing, and so on. In addition to discussing the possible uses of these technologies for the thawing process and their effects on food quality, the purpose of this study is to present a thorough comparative overview of recent advancements in thawing techniques.

Karakaş, Ümit; Özdemir, Vural
Artificial intelligence (AI) and its applications in digital health, bioengineering, and society have significant material impacts on the environment owing to AI’s vast energy demands and energy consumption, carbon footprints, and water usage to cool data centers and generate electricity to power the data centers. Yet, the environmental footprints of AI remain underappreciated and inadequately acknowledged. This is significant, particularly in this era of climate emergency and ongoing threats to planetary energy and water supplies. The vocabulary attached to AI often aims to mimic positive human capacities such as “warmness” and “care.” However, these attempts to humanize AI and digital technology come with an anthropocentric gaze and blind spots that bracket out the environmental impacts and footprints of AI and privilege humans and technology over nonhuman animals and planetary ecological limits. In medicine, the environmental impacts of large language models range from water consumption and carbon emission to rare mineral usage. This commentary and innovation analysis question and queer the popular imagination of AI and digital technology as things that only exist in the immaterial world of cyberspace. In the course of research on AI in planetary health, we must be cognizant of its materiality, ecological impacts, and massive energy and water demands. We argue that moving away from anthropocentric narratives and vocabulary in AI design and praxis would bode well to live within planetary ecological limits so that AI and emerging digital technologies best serve robust and responsible science and all life on the planet Earth. Demirgül, Furkan; Kaya, Halil İbrahim; Ucar, Redife Aslıhan; Mitaf, Naciye Afranur; Şimşek, Ömer
Bacteriocins, ribosomally synthesized by bacteria, have long been recognized for their role in ensuring food safety and security due to their antibacterial effects against foodborne pathogens and spoilage bacteria. However, recent advancements have unveiled their expanding potential beyond food applications, with increasing evidence of their efficacy against clinically significant pathogenic bacteria, biofilm formation, viral infections, and even cancer. These emerging discoveries have continuously added new layers to the application of bacteriocins, extending their relevance from food preservation to broader human health interventions. To further harness this expanding potential, various innovative strategies have been developed to overcome traditional limitations associated with bacteriocin use. Instead of directly employing bacteriocins or bacteriocin-producing bacterial cultures, novel approaches, such as incorporating them into films and packaging materials or coupling them with nanoparticles, have demonstrated enhanced effectiveness. In this review, we examine the evolving landscape of bacteriocin applications and shed light on the expanding functional spectrum of bacteriocins for both food safety and human health, although some important challenges and limitations remain. By analyzing the recent literature and innovative technological advancements, we highlight how bacteriocins are continuously evolving, opening new frontiers for their use and reinforcing their significance beyond their conventional roles.
