Kızıl, Hamit Emre; Ulcay, Sibel; Ekincioğlu, Yavuz; Öğütçü, Hatice; Ağar, Güleray

This investigation examined methanol extracts obtained from the whole plant (encompassing all organs except roots), flowers, and fruits of wild Glycyrrhiza glabra var. glandulifera, a liquorice cultivar indigenous to the Cappadocia region of Türkiye, constituting the first comprehensive in vitro and in silico analysis of this species within the region. Anatomical identification revealed distinctive structural characteristics, including thick-walled epidermal cells in the stem, organized clusters of collenchyma cells, and well-defined sclerenchyma layers encompassing the vascular bundles. The petiole exhibited a characteristic heart-shaped morphology containing three vascular bundles, while foliar analysis demonstrated the presence of stomata on both adaxial and abaxial surfaces, accompanied by a bifacial mesophyll arrangement. The extracts demonstrated remarkable antimicrobial efficacy against both Gram-positive and Gram-negative bacteria, as well as various fungal species. Furthermore, significant cytotoxic activity was observed against non-small cell lung cancer (H460), with the whole plant extract exhibiting IC50 values of 117.8 µg/mL (24 h) and 105.6 µg/mL (48 h). Flower extracts demonstrated IC50 values of 116.8 µg/mL (24 h) and 112.7 µg/mL (48 h), while fruit extracts displayed superior potency with IC50 values of 104.4 µg/mL (24 h) and 63.09 µg/mL (48 h). Molecular docking analyses, conducted utilizing AutoDock Tools 1.5.6 and BIOVIA Discovery Studio Visualizer 4.5, revealed significant protein-ligand interactions, yielding optimal binding energy and inhibition constant values of -9.57 kcal/mol and 96.92 nM, respectively. The RMSD values were calculated based on structural variations between ligand-protein complexes during re-docking procedures. These findings underscore the substantial biological potential of Glycyrrhiza glabra var. glandulifera from Cappadocia, necessitating further comprehensive investigation.

Effects of Autochthonous Starter Cultures on the Quality Characteristics of Traditionally Produced Sucuk

Kaya, Mükerrem; Sayın, Bilge; Çinar Topçu, Kübra; Kaban, Güzin

This study aimed to evaluate the impact of autochthonous strains (Pediococcus pentosaceus 128b, Latilactobacillus sakei S15, Lactiplantibacillus plantarum S91, L. plantarum S24 and Staphylococcus carnosus G109) used as mono and mixed starter cultures on the quality attributes of traditionally produced sucuk, a Turkish dry fermented sausage, in a local small-scale facility. At the end of ripening, samples underwent comprehensive microbiological and physicochemical analyses. The use of autochthonous starter cultures (ASC) showed no statistically significant influence on thiobarbituric acid-reactive substances and water activity value. Lower pH values were observed in groups with autochthonous lactic acid bacteria strains (ALABS) compared to the control group. However, ALABS inhibited Micrococcus/Staphylococcus growth by rapidly lowering the pH, except in the groups with S. carnosus G109. The use of ASC led to an increase in the L* values of sucuk samples, except monoculture L. plantarum S91. The correlation heat map illustrating the relationships between the starter cultures and volatile compounds revealed that all groups containing L. plantarum S91 exhibit a volatile compound profile different from other single or mixed cultures. According to the results of the principal component analysis performed to determine the relationship between the chemical groups of the starter cultures and volatile compounds, the groups containing L. plantarum S91 differed from the other groups and showed positive correlations with phenols, furans, acids, terpenes, aromatic hydrocarbons, ketones, nitrogenous compounds, esters, and aliphatic hydrocarbons.

Optimized ultrasonic-NaDES extraction of anthocyanins, polyphenolics, and organic acids from chokeberry fruit with blueness and antimicrobial evaluation

Gerçek, Yusuf Can; Kutlu, Naciye; Çelik, Saffet; Bayram, Sinan; Kırkıncı, Seran; Ecem Bayram, Nesrin

Deep eutectic solvents (DESs) have been widely used in food processing in recent years, owing to their remarkable advantages. The aim of this study was to evaluate the potential of DESs for the recovery of bioactive components from chokeberry fruit. First, among the 10 different DESs, the DES that extracted the highest total individual phenolic content (TIPC) from chokeberry was determined. Then, ultrasonically assisted extraction conditions (ultrasonic amplitude, time, and temperature) were optimized by response surface methodology to obtain the maximum amount of TIPC using this DES. According to the results obtained, the natural deep eutectic solvent (NaDES) choline chloride: acetic acid (1:2, 30% water content) provided the highest yield for TIPC extraction and the optimum conditions for maximum TIPC extraction were determined as 100% for ultrasonic amplitude, 50 °C for temperature and 60 min for sonication time. The TIPC content of the extracts prepared with this NaDES was determined between 1740.26 and 3703.14 mg/kg. In addition, the individual organic acid and individual anthocyanin contents of the NaDES extracts, as well as their antioxidant and antimicrobial activities, were determined. Chlorogenic acid (1392.351–2361.48 mg/kg) among phenolic compounds, pyruvic acid (9361.35–47398.04 mg/kg) among organic acids and kuromanin chloride (69748.13–134668.24 mg/kg) among anthocyanins were the dominant compounds in NaDES extracts. However, the extracts showed varying levels of antimicrobial activity against Gram (+) bacteria, Gram (−) bacteria, and yeast-like fungi (Candida strains). Finally, the Blue Applicability Grade Index (BAGI) was used to evaluate the practicality/blueness potential of the chromatographic method used to determine the anthocyanin composition of the DES extracts. In conclusion, NaDES (choline chloride:acetic acid) can be an alternative solvent for the recovery of some individual phenolics, organic acids and anthocyanins under different extraction conditions. In addition, the use of NaDES in the recovery of various functional compounds needed in food, cosmetics, pharmaceuticals, etc., is important for the promotion of sustainability and green technology.

ANALYSIS OF PESTICIDES, ANTIBIOTICS, AND HEAVY METAL LEVELS IN HONEY PRODUCED IN THE BAYBURT AND UPPER ÇORUH VALLEY REGIONS OF TÜRKİYE; [Türkiye'nin Bayburt ve Yukarı Çoruh Vadisi Bölgelerinde Üretilen Ballarda Pestisit, Antibiyotik ve Ağır Metal Düzeylerinin Analizi]

    Özdemir, Mustafa; Yildizlar, Osman

This study investigates pesticide, antibiotic, and heavy metal levels in Bayburt and the Upper Çoruh Valley honey. Thirteen honey samples were collected from different apiaries managed by stationary and migratory beekeepers. These samples were analysed for heavy metals (Fe, Cu, Zn, Cd, Pb), antibiotics, pesticides, and chemical residues such as naphthalene. The results revealed that lead (Pb) levels exceeded international food safety standards in 2 honey samples, while pesticide residues were detected in 5 samples. Additionally, antibiotic residues were found in 6 samples, including sulfamethazine, tetracycline, and streptomycin. However, no naphthalene was detected in any of the samples. These findings highlight the importance of stricter regulations and monitoring systems to control chemical use in beekeeping practices. Enhancing awareness among beekeepers regarding the risks associated with pesticide and antibiotic use is crucial for improving honey quality and ensuring the health of beekeepers and consumers. The adoption of safer practices and adherence to guidelines are necessary to mitigate these health hazards.

The impact of osmotic dehydration and microwave drying process conditions on the quality characteristics of celery roots (Apium graveolens l. Subsp. rapaceum)

    Kutlu, Naciye

In this study, celery roots were dried by the osmotic dehydration-assisted microwave drying method, and both osmotic dehydration (OD) and microwave conditions were optimized using response surface methodology (RSM). Utilizing a Box–Behnken experimental design, the drying time was minimized while maximizing the total phenolic compounds (TPC) in dried samples at different OD salt concentrations (10, 20 and 30 %), OD temperatures (30, 45 and 60 °C), OD durations (1, 2 and 3 h) and microwave powers (210, 350 and 490 W). The optimal drying conditions were identified as 15.05 % for OD salt concentration, 42.5 °C for OD temperature, 1.6 h for OD duration and 489.7 W for microwave power. Under these optimal conditions, the predicted values for time and TPC were 10 min and 104.38 mg GAE/100 g, respectively. The composite desirability value was 0.99 as a result of optimization. The experimental values for time and TPC were measured as 11 min and 97.45 mg GAE/100 g, respectively. The predicted and experimental values were found to be statistically similar to each other. A comparison with control groups designed to assess the effects of OD and microwave processes revealed that these processes significantly influenced both quality (TPC, antioxidant activity, color) and drying characteristics (drying time, rehydration rate). The greenness assessment value was calculated as 78 using the MoGAPI tool. Consequently, the application of OD pretreatment and use of the innovative microwave drying method as a final drying step in vegetable drying was successfully implemented to enhance the properties of the final product.

İspirli, Hümeyra; Arslan, Şeyma; Tuncer, Fatma; Kasapoglu, Muhammed Z.; Ortakcı, Fatih; Tuncil, Yunus Emre; Dertli, Enes

The production of exopolysaccharides (EPS) by Lactic Acid Bacteria (LAB) is technologically crucial because it has a wide range of applications in food technology, biotechnology, and health. In the present work, a new quinoa sourdough isolate of Leuconostoc mesenteroides strain AK7 was identified as a novel producer of a dextran-type EPS. The monomeric units of EPS AK7 were confirmed by HPLC analysis, while NMR spectroscopy and GC–MS linkage analysis further verified the EPS structure as a branched dextran containing mainly (1 → 6)-linked α- D -glucose units with (1 → 3,6)-linked α- D -glucose unit as branching points. An average molecular weight of 1.2 × 106 Da was detected for glucan AK7. FTIR analysis was applied to determine the functional units of dextran AK7. In terms of thermal features, TGA and DSC analysis were applied and a specific degradation temperature of 300 °C was found for dextran AK7. The morphology of the lyophilized EPS displayed a rough, dense, and porous structure, as observed through SEM analysis. Dextran AK7 revealed a semi-crystalline nature detected by XRD analysis. These structural and functional properties of dextran AK7 produced by Leuconostoc mesenteroides AK7 from quinoa sourdough suggest its potential usage for food industry applications.

Quantification of phenolics by LC-MS/MS of monofloral and polyfloral Honey: Evaluation of the greenness of the method with MoGAPI and MoGSA

Gerçek, Yusuf Can; Baştürk, Fatma Nur; Özkök, Aslı; Cevahir Öz, Gül; Ecem Bayram, Nesrin

This study evaluated the physicochemical properties, total phenolic content (TPC), total flavonoid content (TFC), antioxidant activity, proanthocyanidin content, and polyphenolic profiles of monofloral and multifloral honey samples produced in Türkiye. In addition, the greenness of the analytical method was assessed using two different evaluation tools: MoGSA and MoGAPI. The TPC and TFC values for multifloral honeys ranged from 0.18–0.65 mg GAE/g and 0.01–0.09 mg QE/g, respectively, whereas for monofloral honeys, these values ranged from 0.16–0.98 mg GAE/g and 0.01–0.37 mg QE/g. The highest CUPRAC and DPPH values were observed in Erica spp. honey, consistent with its TFC and total individual polyphenolic compound results. Notably, the Erica spp. honey sample exhibited a significantly higher gallic acid content (26.13 µg/g) compared to the other samples. These findings suggest that Erica spp. honey characterized by its high TPC, antioxidant activity, and distinctive polyphenolic profile, may serve as a notable dietary source of antioxidants. Additionally, the MoGAPI and MoGSA scores of the method were determined to be 84 and 91.67, respectively, demonstrating its high environmental sustainability.

    Erkılıç, T. Orkun; Bayraktar, B.

Background: This study aims to investigate the anti-obesity effect of GOE with adipokine (apelin and adiponectin) response at different doses (100 and 200 mg/kg) of GOE in normal healthy and obese rats with High-fat diet (HF). Methods: In this study, 36 adult male Wistar albino rats, aged between 8-10 weeks, were used. 6 groups were created, with 6 rats in each group: Control (C), Rat group without GOE and HF application, G100 (GOE 100 mg/kg group given with oral gavage route of administration (OGRA), G200 (GOE 200 mg/kg group given with OGRA), HFC (HF control group): no HF and no GOE group), HF100 (rats receiving HF were 100 mg/kg graviola oil extract added to their diet), HF200 (rats receiving HF were 200 mg/kg graviola oil extract added to their diet). Blood samples were taken from the tail vein (vena caudalis) of all on days 0 and 60 of the study. Apelin and adiponectin levels in the serum samples were measured by ELISA method. Result: In the present study, a significant increase (p<0.01) was observed in the mean serum apelin level in the HF groups at the end of the 60 day after HF induction, while a significant decrease (p<0.01) was also detected in the adiponectin level. On the other hand, when examined in terms of BW, the most significant decrease due to GOE addition in the HF groups, i.e. the anti-obesity effect, was determined in the HFG200 mg/kg group (p<0.01). As a result, it was concluded that GOE may be safe and beneficial when administered at a dose of 200 mg/kg in obesity-induced rats.

Identification of additional probiotic attributes in yeasts isolated from tarhana fermentation

Erdem, Belgin; Kaya, Halil İbrahim; Tulumoğlu, Şener; Coteli, Ebru; Şimşek, Ömer

Fermented foods constitute a valuable source of probiotics for both bacteria and yeasts. To date, however, there has been a limited amount of research conducted on Saccharomyces cerevisiae, Kazakhstania servazzi, Kluyveromyces marxianus and Torulaspora delbrueckii isolated from tarhana. The objective of the research is to identify additional probiotic characteristics other than the leavening activity exhibited by yeasts that were previously isolated from tarhana fermentation. In this study, yeasts were subjected to subsequent acid and bile salt tolerance, bile salt hydrolysis, antagonistic activity, aggregation activity (auto-aggregation and co-aggregation), cholesterol assimilation, folate production, biofilm production, and hemolysis activity. S. cerevisiae PCF122, S. cerevisiae PCF107, and S. cerevisiae PCF134 strains grew at pH 2 and 2,5 but remained at pH 3. Except for S. cerevisiae PCF115 and T. delbrueckii PCF150, all yeasts were found to be 0,5% and 1,0% oxalate tolerant. All yeasts hydrolyze oxalate (bile salt), but only S. cerevisiae PCF115 and T. delbrueckii PCF150 produced EPS. Yeasts also exhibited significant amounts of autoaggregation (46–87%). After 24 and 48 h incubation, all strains assimilated cholesterol at rates ranging from 10,4% to 87,5% and 10,6–91%, respectively. The highest folate production was determined at S. cerevisiae PCF108 (56 µg/mL) and the lowest was at S. cerevisiae PCF110 and K. marxianus PFC120 (18 µg/mL). In conclusion, yeasts that existed in tarhana fermentation showed cholesterol assimilation, folate production, and aggregation activity which are additional probiotic attributes that would have consumer health promotion, beside these yeast leaven the tarhana dough.

Thawing frozen foods: A comparative review of traditional and innovative methods

Çalışkan Koç, Gülşah; Özkan Karabacak, Azime; Süfer, Özge; Adal, Samiye; Çelebi, Yasemin; Delikanlı Kıyak, Berrak; Öztekin, Sebahat

Due to the changing consumer lifestyles, the tendency to adopt foods that require less preparation time and offer both variety and convenience has played a significant role in the development of the frozen food industry. Freezing is one of the fundamental food preservation techniques, as it maintains high product quality. Freezing reduces chemical and enzymatic reactions, lowers water activity, and prevents microbial growth, thereby extending the shelf life of foods. The freezing and thawing procedures directly impact the quality of frozen foods. The degree of tissue damage is determined by the freezing rate and the structure of the ice crystals that form during the freezing process. Generally, thawing occurs more slowly than freezing. During thawing, microorganisms, as well as chemical and physical changes, can cause nutrient damage. Thus, the goal of this review is to identify innovative and optimal thawing strategies. In order to save energy and/or improve quality, new chemical and physical thawing aids are being developed alongside emerging techniques such as microwave-assisted, ohmic-assisted, high pressure, acoustic thawing, and so on. In addition to discussing the possible uses of these technologies for the thawing process and their effects on food quality, the purpose of this study is to present a thorough comparative overview of recent advancements in thawing techniques.

Comparative quality assessment of plant-based kefir as a vegan alternative to traditional kefir

Meral-Aktaș, Hacer; Bazu-Çırpıcı, Burcu; Aktaș, Haktan; Kadi̇roğlu, Hafsa; Çeti̇n, Bülent

Plant-based milk is emerging as a promising alternative for vegan and vegetarian diets and for people who are allergic to animal products. In this study, kefir was produced using hazelnut, walnut, and cashew milk, and fermented with a combination of Bifidobacterium longum (human origin) and selected autochthonous microbial strains with probiotic potential found in traditional kefir. Significant variation was identified in the physicochemical, microbiological and sensory analyses of kefir produced with plant-based milk and cow milk kefir as a control. In particular, phenolic compound and total phenolic contents were found to be greater in plant-based kefir than in cow milk kefir. Notably, walnut kefir exhibited the highest total phenolic content at 843 mg GAE/L, compared to 83 mg GAE/L in cow milk kefir, highlighting a significant increase in antioxidant potential. On the other hand, the sensory properties of cow milk kefir were rated higher than those of kefir made with plant-based milk. These findings suggest that plant-based kefir can serve as a vegan beverage alternative, although further development is needed to improve flavour acceptability.

Influence of ultrasonic-assisted deep eutectic solvent extraction on bioactive compounds from germinated mung beans (Vigna radiata) and greenness assessment

Yücel, Tuğçenur; Kamiloğlu, Aybike; Kutlu, Naciye

In this study, the ultrasonic-assisted method was applied to extract phenolic, flavonoid, and antioxidant compounds from germinated mung beans. In addition, deep eutectic solvents (DESs) were chosen as solvents to support the green concept and to increase their applicability. Choline chloride is a quaternary ammonium salt and was used as the hydrogen bond acceptor (HBA), and compounds from the alcohol, organic acid, sugar, and amide groups were combined as hydrogen bond donors (HBD) to obtain 8 different DESs. Higher yields were obtained with ultrasonic-assisted DESs compared to the traditional method (maceration) when total phenolic compound and antioxidant activities were evaluated. While the most effective solvent for total phenolic compound yield was choline chloride:fructose, the highest antioxidant activity values were obtained with solvents using organic acids as HBD. Moreover, Blue Applicability Grade Index (BAGI) was used to assess the greenness of the applied ultrasonic-assisted spectrophotometric extraction and DESs. As a result, using green technology and green solvents was influential in the extraction of bioactive compounds, and their applicability was especially effective for mung beans.

Kolayli, Sevgi; Okumus Yukunc, Gulsah; Kara, Yakup; Demir Kanbur, Esra; Can, Zehra; Ozkok, Aslı; Tanugur Samanci, Aslı Elif

This study investigated the botanical origin, chemical composition, phenolic and volatile aromatic profiles, and antioxidant activities of 11 bee bread samples from different regions of Anatolia, Turkey. The bee bread samples contained high amounts of proteins (19.61 g/100 g) and lipids (6.43 g/100 g). The bee breads were determined to have a rich mineral content. The antioxidant potential of the bee breads was predicted using total phenolic content (TPC), total flavonoid content (TFC), total condensed tannin (TCT) content, 2,2-diphenyl-1-picrylhydrazyl (DPPH), and ferric reducing antioxidant power (FRAP) assays. The TPC of the bee breads ranged between 2.041 ± 0.170 and 3.224 ± 0.006 mg GAE/g, while the TFC ranged from 0.323 ± 0.004 to 1.903 ± 0.017 mg QE/g. The FRAP assay showed antioxidant activity ranging from 17.778 ± 0.207 to 49.752 ± 0.856 µmol FeSO4.7H2O/g, and the DPPH values were between 1.054 ± 0.009 and 4.366 ± 0.014 SC50 mg/mL. Using 25 standards, RP-HPLC-PDA quantified the composition of the phenolic compounds, attributed to their antioxidant activity. The highest concentrations were detected for t-cinnamic acid, rutin, and p-coumaric acid. One hundred nineteen volatile aromatic compounds were determined in the bee breads by solid-phase microextraction coupled with gas chromatography and mass spectrometry (SPME-GC-MS). The obtained values suggest that bee breads could serve as a potential source of nutrients and bioactive compounds for value-added food supplements and functional foods.

Yılmaz, Özlem; Kaban, Güzin; Kaya, Mükerrem

The aim of the study was to investigate the effects of different concentrations (0.15, 0.30, and 0.45 mL/L) of essential oils from coriander seeds (Coriandrum sativum), tarragon (Artemisia dracunculus), and orange peels (Citrus sinensis) on biomass, lipid content, and lipid yield of the strains Yarrowia lipolytica Y-1094, Y. lipolytica YB 423, and Y. lipolytica IFP29. The fatty acid composition of the oils produced by the strains was also determined. The highest biomass (5.38 ± 1.80 g/L) and lipid production (0.98 ± 0.42 g/L) were observed in the presence of Y. lipolytica IFP29 and Y. lipolytica YB 423, respectively. The lipid yield showed the highest value at the level of 0.45 mL/L in the presence of the Y. lipolytica Y-1094 strain. The correlation heat map results indicate that 0.45 mL of tarragon affected biomass and lipid content more than the other essential oils used. Y. lipolytica Y-1094 produced higher levels in terms of myristic acid and palmitic acid in all three essential oil sources than the other strains. The highest oleic acid level of all strains was determined in coriander seed essential oil, and the lowest in tarragon essential oil. The oleic acid level of Y. lipolytica Y-1094 was lower than that of the other two strains in all essential oils. Regarding linoleic acid, the oil level did not have a significant effect in the presence of tarragon and orange peel.

Electrospinning Encapsulation of Chlorophylls Microwave-Extracted from Spinach Waste and Utilization as Coloring Agent in Yogurt

Isik, Beyza Sukran; Bayram, Sinan; Altay, Filiz

Natural colorants have become a developing market because of consumer preferences, and more cost-effective and stable production is necessary. In the present study, a natural green colorant was obtained via microwave-assisted extraction from spinach waste to produce affordable, environmentally-friendly, and innovative colorants. The extracts were encapsulated with zein via uniaxial and coaxial electrospinning techniques to overcome the stability issues associated with their natural green color. The encapsulation efficiencies of uniaxially encapsulated chlorophyll extracted from spinach waste by microwave were 63.50 and 57.18 for chlorophyll a and b, respectively. The efficiencies of chlorophyll a and b by coaxial electrospinning were found 49.53% and 88.58%, respectively. The microwave-assisted extraction and the addition of eumelanin may contribute positively to the antioxidant activity and thermal stability of electrospun samples. The stability test against light revealed that 61% of chlorophyll a could be preserved by uniaxial electrospinning. In addition, when chlorophyll-loaded nanofibers were incorporated into yogurt, a more stable green color was achieved during storage.

This research investigates the effects of various drying procedures and intensification technologies on the color profile of dried fruits and vegetables. The primary goal is to identify the most effective techniques for minimizing degradation, which is frequently caused by exposure to heat, oxygen, and longer drying durations, while retaining the original color of these products. Although conventional techniques like sun and hot air drying are often employed, enzymatic and non-enzymatic brownings usually cause a considerable loss of color. New technologies aim to better preserve the original color by cutting down on processing temperature and drying time. The paper also looks at the possibilities of hybrid drying approaches, which combine techniques such as infrared hot air drying and microwave hot air drying. These methods have been demonstrated to be especially successful in preserving color integrity and enhancing drying process effectiveness. The results highlight the vital significance that parameter optimization and drying technique selection play in maintaining the nutritional value and aesthetic appeal of dehydrated fruits and vegetables. This study emphasizes the significance of developing drying technologies to satisfy consumer desires for premium, aesthetically pleasing food goods, because color is a major factor in determining consumer acceptance and perceived product quality. With wider implications for food preservation and the food industry overall, this work helps to develop more effective and efficient drying processes by shedding light on how various drying techniques affect color retention.

Quantification of Honey Adulteration Using a Planar Microstrip Metamaterial-Motivated Sensor and Software-Defined Radio

This work presents the application of a planar microstrip metamaterial (MM)-motivated sensor in the form of a split-ring resonator (SRR) for the detection and quantification of water adulteration in honey samples. The proposed sensor utilizes inexpensive software-defined radio (SDR) measurements, offering a cost-effective solution. Unlike previous MM sensors employing SRR configuration, our proposed MM-motivated sensor is integrated with a microstrip feedline and an additional vertical bar, enhancing its sensing capability. To enable accurate measurements, a simple calibration procedure based on baseline normalization is implemented, allowing for amplitude-only transmission measurements (|S-21|) using the SDR. A special sample holder was designed to increase the repeatability of measurements. We separately employ two postprocessing techniques, namely, the rolling average (RA) approach and the Savitzky-Golay (SG) filter, to effectively eliminate ripples in the measured |S-21| data obtained from the SDR. For validation and evaluation of the proposed sensor and postprocessing techniques, measurements of flower honey samples with water adulteration levels (delta ) up to 10% (mass-to-mass basis) were also performed using a vector network analyzer (VNA). The resonance frequency of |S21| is utilized as the basis for analysis. We establish a metric function (linear function) that correlates the shift in resonance frequency with delta. It is observed that this function fits to measured resonance frequency values with an R(2 )value greater than 0.96 for both postprocessing techniques with or without the sample holder. By inverting this function, we can predict delta with considerable accuracy for a given resonance frequency by using another linear function. It is observed that percentage variations between predicted and measured delta values are between 1.54% and 6.46% for testing samples with delta = 5% and delta = 7%.
