Effect of Heat Treatment on Storage Stability of Sheep Tail Fat; [Isıl İşlemin Koyun Kuyruk Yağının Depolama Stabilitesi Üzerine Etkisi]

Bozdemir, Merve; Gençcelep, Hüseyin; Yüzer, Mustafa Onur

In this study, the effects of various physical, chemical, and technological properties of sheep tail fat (fresh and ghee) as well as different storage durations, storage temperatures, and the use of additives on the storage stability of thermally processed sheep tail fat (ghee tail fat) were investigated. To prevent lipid oxidation and other degradation factors during use after long-term storage, salt and antioxidant additives were used. Samples were stored in glass jars at 25ºC, +4ºC, and -18ºC for 90 days. The moisture, protein, fat, and ash contents of fresh tail fat was determined as 11.2%, 3.47%, 85.0%, and 0.07%, respectively. In clarified fat, the moisture content was determined as 0.4%, protein content as 2.98%, fat content as 96.0%, and ash content as 0.05%. Additionally, the cholesterol content in tail fat was 60 mg/100 g in fresh tail fat and 58 mg/100 g in ghee tail fat. The pH values of fats were determined as 5.7 in fresh samples and 6.2 in ghee samples. The fatty acid compositions of samples revealed that the dominant fatty acid groups in both fresh and ghee sheep tail fat were palmitic, stearic, and oleic acids. Fresh tail fat stored at room temperature deteriorated in terms of chemical properties (FFA, peroxide, and TBA) within 7 days, while those stored at +4ºC deteriorated within 15 days. However, thermally processed samples were preserved without deterioration for 60 days at these storage temperatures.

Ayvaz, Huseyin; Yao, Siyu; Morta, Mustafa; Temizkan, Riza; Akpolat, Hacer; Rodriguez-Saona, Luis E.

The globalization of the food market, the prevalence of economically motivated adulteration, and the scarcity of high-value food sources have posed significant challenges to ensuring food authenticity in the industry. The assessment of food authenticity has now become a matter of utmost importance, necessitating the adoption of rapid and robust methods. While well-established techniques are available for analysis, many are not always feasible because of the need for high-priced instrumentation and proficient operators, excessive time requirements, and the destructive nature of the methods. However, Raman spectroscopy has been positioned as an attractive technology offering high-speed and nondestructive fingerprinting capabilities to monitor sample characteristics of foods. Improvements in optical technology and portable instruments have allowed field-deployable devices and have made it practical to detect adulteration from production to the market. An extensive literature has demonstrated the convenience and efficacy of these instruments in fulfilling the needs of the food industry. This chapter highlights the recent advancements in research studies focusing on the utilization of Raman spectroscopy for the rapid determination of food adulteration and authentication. These developments showcase the potential of Raman spectroscopy as a valuable tool in addressing the challenges posed by food fraud. The ongoing progress in Raman spectroscopy and its applications in food authenticity assessment represents a significant step forward in combating adulteration and ensuring the integrity of our food supply. Further research and technological advancements in this field will enhance the capabilities of Raman spectroscopy, providing the industry with increasingly reliable, efficient, and practical methods to combat food adulteration and authenticate the foods we consume.

The Effect of Different Doses of Salt Stress on Germination and Emergence in Cannabis (Cannabis sativa L.) Seed Treated with Pre-Salicylic Acid

Gul, Volkan; Sefaoglu, Fırat; Cetinkaya, Hatice; Dinler, Burcu Seckin

It is known that salinity stress, one of the abiotic stress factors, significantly limits the germination, growth, development, and crop yield of plants. Therefore, this study was conducted to evaluate the effects of salinity (control, 50, 100 ve 150 mM) on seed germination and the effect of salicylic acid (control, 0.25, 0.50, 0.75 ve 1.00 mM) on seed germination to improve salt tolerance in cannabis seeds. The physiological characteristics of the plant, such as germination percentage, germination duration, germination index, radicle length, plumule length, wet radicle weight, dry radicle weight, wet plumule weight, and dry plumule weight, were analyzed. Depending on the salinity application dose, it was observed that there was a significant decrease in the germination parameters of cannabis seeds compared to the control. It was observed that salicylic acid treatments under salinity stress positively affected all the characters examined and reduced germination arrest due to increasing concentration levels. Although it is recommended to prepare seeds with 0.5 mM salicylic acid pre-application dose against salt stress of the cannabis plant,it is essential to expand the studies on its transfer to practice. As a result, salicylic acid will provide positive results that can be transferred to practice by increasing the resistance of cannabis plants against salinity, especially in agricultural soils with salt problems, as it will be more sensitive to pests and diseases.

Gercek, Yusuf Can; Dagsuyu, Eda; Basturk, Fatma Nur; Kırkıncı, Seran; Yıldırım, Nazlıcan; Kıskanç, Gamze; Özmener, Bahar; Unlu, Yigit Sabri; Kalkan, Seda Nur; Boztaş, Kadir

Bee products are an important source of nutrients and bioactive phytochemicals. This study aimed to determine the chemical composition (proximate composition, general phytochemical composition, sugar, and phenolic profiles) of four different products (honey, bee pollen, bee bread, and propolis), obtained from the same apiary, as well as to assess their biological activity through antioxidant and enzyme inhibition assays (α-amylase, α-glucosidase, lipase, AchE, neuraminidase, angiotensin-converting enzyme, urease, trypsin, tyrosinase, carbonic anhydrase, thioredoxin reductase, adenosine deaminase). Clear differences were observed among the samples in terms of both chemical composition and biological activity. The analysis revealed that bee pollen exhibited the highest carbohydrate content (87.9%), while propolis was identified as the richest source of phenolic compounds (14,858.9 mg/kg) among the analyzed samples. Propolis exhibited the highest biological activity in all applied antioxidant assays (CUPRAC, DPPH•, and ABTS•+) and in most enzyme inhibition assays. Notably, the α-glucosidase inhibition activity of propolis was comparable to that of the reference standard. In addition, honey exhibited remarkable trypsin inhibition, also comparable to the applied standard. These findings highlight the diverse bioactivities of hive products, which could play a key role in promoting health and preventing diseases.

    Bayraktar, B.; Demir, N.; Aksakal, V.

Background: Mitochondria are organelles called power plants of the cell, which are found in eukaryotic cells and are responsible for the production of energy needed by the cells through aerobic respiration. Mitochondrial dysfunction causes endocrinological, cardiovascular, metabolic and neurodegenerative diseases. The aim of this study was to examine the effects of body condition score (BCS), lactation, pregnancy, age and gender on Mitochondrial-Derived Peptide (MOTS-c) and Brain Mitochondrial Transporter Protein 1 (BMCP1) levels in Akkaraman sheep. Methods: Sheep are classified into 3 categories according to BCS (BCS<2, BCS=3-3.5, BCS≥4). In creating groups in terms of BCS, it was determined by the palpation method applied to the waist area. The sheep included in the study were divided into 4 groups: early lactation, early pregnancy, late pregnancy (dry period) and age (female and male sheep).1st group, ewes in the first period of pregnancy (on the 100th day of the first pregnancy) (n= 30), 2nd group, ewes in the early lactation period (n= 30), 3rd group, ewes in the dry period (the last two months of pregnancy) (n= 30) and in the 4th group, <2 (young) (n=30), 2-8 (adult) (n=30), 8> (old) (n=30), male and female sheep (n=30) of different ages. =180) total of 270 animals. Blood samples were taken from the jugular vein of the sheep before the morning feeding. MOTSc and BMCP1 levels were determined in blood serum samples by ELISA method. Result: In the study, serum MOTS-c and BMCP1 levels in sheep during lactation and pregnancy were determined to be lowest in the VKS<2 group and highest in the VKS ≥4 groups. Likewise, in age and gender groups, the highest level was detected in young lambs and yearlings in the VKS<2 group, while the highest level was detected in old sheep and rams in the VKS ≥4 group. As a result, it was determined that different age, gender, pregnancy and lactation periods affected serum MOTS-c and BMCP1 levels depending on the change in BCS (P<0.05). It was concluded that MOTS-c and BMCP1 may be useful parameters in the evaluation of mitochondrial function, energy metabolism and metabolic profile.

Kılıç, Ceyhun; Gürgen, Ayşenur; Yıldız, Sibel; Can, Zehra; Değirmenci, Atiye

In mushroom cultivation, it is important to be aware of the impact of the growing substrate. This study investigated the cultivation of various oyster mushrooms, including Pleurotus ostreatus, Pleurotus citrinopileatus, and Pleurotus djamor, on different types of wood sawdust. Total phenolic content, condensed tannins, antioxidant activity by ferric reducing antioxidant power assay, protein and sensory evaluations were performed in cultivated oyster mushrooms. Wood sawdust of Fagus orientalis (oriental beech), Alnus glutinosa (alder), Castanea sativa (chestnut), and Juglans regia (walnut) were used as substrate for studied mushroom type, separately. Because champignon (Agaricus bisporus) was the most consumed mushroom, it was used as control sample. Methanolic extracts of dried mushrooms were used to measure bioactive characteristics. Pleurotus ostreatus samples cultivated in Alnus glutinosa (alder) sawdust substrate had the highest antioxidant activity. The lowest antioxidant activity values were found in Pleurotus djamor cultivated in Juglans regia (walnut) wood sawdust substrate. The highest protein content was measured in Agaricus bisporus as 13,84 %. The other highest protein concentration was found in Pleurotus ostreatus cultivated in Alnus glutinosa (alder) sawdust substrate, at 13,75 %. The lowest protein concentration belonged to Pleurotus citrinopileatus cultivated in Fagus orientalis (oriental beech) sawdust substrate as 9,86 %. While Agaricus bisporus and Pleurotus ostreatus had the highest overall appreciation score, Pleurotus citrinopileatus had the lowest. It has been observed that the substrate content has an important impact on chemical and sensory properties of the oyster mushrooms. This study provides knowledge on the chemical and sensory characteristics of three different Pleurotus mushroom species cultivated on different composts.

Olive Oil Production Forecasts for a Macro Perspective during 2024–2027

Kurtoğlu, Seval; Uzundumlu, Ahmet Semih; Gövez, Elif

Olive oil, which is part of the Mediterranean diet, is one of the most important foods for a healthy diet. The number of countries that produce these important foods has not increased significantly over the years. However, the number of exporting countries tripled in the same period. This study aimed to predict the countries that will lead olive oil production globally between 2024 and 2027 by using the production data from the period 1961–2023. The data were analyzed using the ARMA model in the statistical program SAS. According to the results for the 10-year period of 1961–1970, there were 25–26 olive-oil-producing countries in the world. Approximately 31.26% of olive oil production was in Italy, 28.32% in Spain, 13.14% in Greece, 7.80% in Turkey, and 5.74% in Portugal. According to the average production for the period 2024–2027, it is estimated that 34 and 35 countries will produce olive oil, with 29.93%, 9.08%, 9.06%, 9.00%, and 8.90% of the world’s production provided by Spain, Greece, Turkey, Morocco, and Italy, respectively. These five countries account for 65.96% of the world’s production level. The estimation results of this study found that there are many exporting countries other than the leading producer countries thus showing that the producer countries do not have a forceful marketing concept, and therefore intermediaries emerge. For this reason, producer countries such as Turkey, Tunisia, and Morocco, which are not very competent in marketing, will have more say in the market by using their resources more effectively and making more effective strategies with an improved production and marketing approach.

Sensory analysis and consumer acceptance of legume-based gluten-free bakery products

    Erten, Edibe S.; Erten, Tayyibe

The replacement of gluten is essential for the development of gluten-free foods. To achieve this, variety of flours (such as corn flour, chestnut flour, and buckwheat flour) have been investigated by food scientists. Legume flours seem preferable to other flours among these gluten-alternative sources due to their nutritional quality. In this chapter, recent developments in legume-based gluten-free bakery products were investigated. Due to their high protein content, legumes have numerous applications in the gluten-free food industry. However, undesirable flavor formation limits their widespread usage. For this reason, the effects of replacing gluten-containing ingredients with legumes on the sensory properties and consumer acceptance were discussed as the main focus of this chapter.

A Study on Recognizing the Value of Chestnut (Castanea sativa) Blossom Waste

Sahin, Huseyin; Kolayli, Sevgi; Kara, Yakup; Can, Zehra; Guler, Halil Ibrahim; Ozkok, Asli; Serdar, Umit

Chestnut (Castanea sativa) blossoms are natural resources that are not put to economic use. They are completely mixed with soil as waste. Thus, this extensive study was designed and remarkable results were found showing the potential usefulness of chestnut blossoms. In addition to the phenolic capacity and antioxidant capacity of the aqueous and ethanolic extracts of dried chestnut flowers, the anti-urease activity of these extracts was studied to demonstrate their therapeutic value. The binding interaction of phenolic substances present in chestnut blossom with urease was shown using molecular docking research. The aqueous extract, with most effect, had total phenolic content of 46.67 ± 0.37 mg GAE/g and total flavonoid content of 6.14 ± 0.40 mg QUE/g. The antioxidant activity was determined by FRAP (648.47 ± 5.27 µmol FeSO4.7H2O/g for aqueous extract and 347.53 ± 2.09 µmol FeSO4.7H2O/g for ethanolic extract) and DPPH (0.05 ± 0.01 mg/mL for SC50 of aqueous extract and 0.11 ± 0.01 mg/mL for SC50 of ethanolic extract) assays, and rutin was found to be the dominant phenolic compound according to HPLC. IC50 values for urease in aqueous and ethanolic extracts were 2.55 ± 0.09 mg/mL and 4.57 ± 0.24 mg/mL, respectively. According to the docking experiments, which were important to support the hypothesis of anti-urease activity, myricetin and luteolin showed different and effective bonding degrees to the target protein when compared with the reference molecule acetohydroxamic acid. In summary, chestnut flowers are rich in phenolic compounds which are responsible for a wide range of biological activities including antioxidant features and urease inhibition. These blossoms could be evaluated as potentially important raw materials for food.

Are Organic Foods Better for the Environment? Comparison of Environmental Costs of Organic and Conventional Foods

Alkaya, Fatime; Günay, Esra; Turna, Hilal

Biodiversity loss, soil and water pollution as well as global warming are among the most debated environmental issues worldwide. Conventional farming, which uses chemical pesticides and fertilizers, hormones and genetically modified products to obtain maximum yield per unit of land to feed the rapidly growing world population, is one of the main causes of these problems. As an alternative production system to conventional farming, organic farming has emerged to overcome environmental problems. The effectiveness of organic farming in addressing environmental issues has been debated for many years. In this chapter, the impact of organic foods on the environment is evaluated under the headings of biodiversity, soil and water quality, energy efficiency and climate change. The consensus drawn from studies is that organic farming is a more environmentally friendly production method compared to conventional farming. However, the heterogeneity of studies and environmental factors are influenced by many factors, making it difficult to reach a consensus.

    Microwave Roasting

    Kutlu, Naciye; Pandiselvam, Ravi

Roasting is a process that involves heat treatment to improve the digestibility, flavor and sensory aspects of foods and to provide the desired structural changes in the food product. In the microwave roasting method, the heat treatment applied to food products uses microwave energy. When this method is applied with the right temperature-time combination, it has many advantages, such as shorter processing time, energy efficiency, preserving the color components and nutritional quality to a large extent, prevention of the formation of acrylamide to a large extent and offering easy process control compared to traditional methods (roasting in pan, sand or oven), and therefore it has come to the fore in recent studies. With appropriate optimization studies, the negative effects of the microwave method will be minimized. Studies are needed to adapt the microwave roasting method on an industrial scale. Designing new devices which can use artificial intelligence for microwave roasting, an innovative and economical method, is among research expectations for the future.

The aim of the study is to enrich pasta with cornelian cherry powder, a product with high bioactive contents. In this way, it was aimed to obtain a new product that is more nutritionally advanced and can contribute to the country’s economy. In this study, cornelian cherry with high bioactive content and an attractive color advantage was used for the enrichment of the pasta formulation. In addition, the pasta production procedure was revised by applying microwave technology for drying. Cornelian cherry powder:dough ratio, dough thickness, and microwave power were optimized with response surface methodology. Total phenolic content, antioxidant activity, color, and water-holding capacity were determined as responses. Optimum conditions were found as 4.53% for powder:dough ratio, 0.1 cm for dough thickness, and 270 W for microwave power. According to optimization results, it was detected that the cornelian cherry powder:dough ratio affected the total phenolic content and antioxidant activity, and microwave power was found to be effective only on antioxidant activity. For optimum conditions, the total phenolic content and antioxidant activity were found as 1.29 GAE/g and 0.5 mg TE/g, respectively. The characterization analysis showed that the microwave–dried sample shrank less than those dried with the conventional method. In Fourier transform infrared spectroscopy (FTIR) results, it was determined that the amount of carbohydrates in the samples obtained under optimum conditions was lower than that of control. It has been observed that the application of microwave technology for drying pasta enriched with cornelian cherry powder had positive effects on the quality of the final product.

Optimization of pectin extraction from crab apple peel and usage in a model meat emulsion system

Aldemir, Hazal; Kamiloğlu, Aybike; Çakır, Özlem

The aim of this study was to optimize conditions of microwave-assisted pectin extraction from crab apple peels using the Box–Behnken experimental design. For this purpose, microwave-assisted pectin extraction was performed at different extraction time (3, 6, and 9 min), liquid/solid ratio (75, 100, and 125), and pH (1.5, 2.0, 2.5). The optimum conditions were selected as extraction time (7.77 min), liquid/solid ratio (77.53 mL/g), and pH/1.79). The response, obtained under optimum conditions was determined as 0.1128 ± 0.0137 g pectin/g crab apple peel. In addition, it was determined that the obtained pectin sample had an esterification degree of 79.14% and oil and water binding capacities of 8.5 ± 0.7 g oil/g pectin and 8.1 ± 1.5 g water/g pectin, respectively. It was determined that pectin emulsions showed higher stability at 1% pectin level. The possibilities of using pectin obtained under optimized conditions as a fat replacer in a model sausage system were investigated. Pectin was evaluated in the model sausage system at two different concentrations. With the increasing pectin concentration, the cooking loss value increased from 14 to 18%, while leakage decreased from 0.31% to 0.18%, showing a negative effect on cooking loss and a positive impact on the amount of leakage into the packaging. Pectin obtained from crab apple peel has the potential to be used for reducing fat content in sausage environment.

Effects of titanium dioxide nanoparticles against salt and heat stress in safflower cultivars

Dinler, Burcu Seckin; Cetinkaya, Hatice; Koc, Fatma Nur; Gül, Volkan; Sefaoğlu, Fırat

This study aimed to determine the effects of titanium dioxide nanoparticle (TiO2NP) pretreatment on seeds of different safflower cultivars (Balci, Dinçer) under salt and heat stresses. The apparent effects on stress markers (malondialdehyde (MDA), hydrogen peroxide (H2O2) and superoxide radical (O2 •⁻) content), as well as changes in germination and physiological parameters (radicle and plumula weight and length measurements), were investigated. TiO2NP pretreatment caused an increase in radicle length and plumula fresh weight for the Balci cultivar under salinity. Furthermore, plumula dry weight was alleviated with TiO2NP pretreatment for both cultivars. TiO2NP pretreatment improved plumula dry and fresh weights for both cultivars under heat stress. In addition, MDA content decreased for both cultivars under heat stress but only for Balci under salt stress. The amount of O2 •⁻ radicals positively affected only the radicle for both cultivars under heat stress. This study is the first to document the alleviation of salt stress damage for the Balci safflower cultivar, and protection for both Balci and Dinçer cultivars under heat stress, using 200 ppm TiO2NP pretreatment.

The aim of this study was to optimize drying conditions during ultrasonic-assisted osmotic dehydration and subsequent microwave drying of red beetroot using the Box-Behnken design. For this purpose, ultrasonic-assisted osmotic dehydration was performed at different ultrasonic powers (50, 75, and 100 W), sonication times (20, 40, and 60 min), and salt concentrations (0%, 15%, and 30%). The subsequent drying procedures were conducted with 231, 518, and 805 W microwave power. The best condition was selected as 5.15% salt concentration, 20 min sonication time, 50 W ultrasonic power, and 716.45 W microwave power. The responses obtained under optimum conditions were determined as 68.06%, 9.54 mg GAE/g dm, 28.23, 42.66, and 3.08 for DPPH• % inhibition, total phenolic content, L*, a*, and b* values, respectively. While favorable impacts on color were detected for the applied pretreatments, the DPPH• scavenging activities of the dried beetroot were determined to be more significant after ultrasonic-assisted osmotic dehydration. Furthermore, the drying kinetics of beetroot were evaluated according to the Midilli et al. model. When the fit to the model was investigated, it was compatible at R2> 0.90 level. As a result, the ultrasonic-assisted osmotic dehydration pretreatment performed before the microwave drying method preserved the quality characteristics of beetroot samples and was successfully applied.

THE EFFECT OF DIFFERENT STORAGE DURATION PERIODS AFTER HARVESTING IN A SEMI-ARID ENVIRONMENT ON THE QUALITY COMPONENTS IN SUGAR BEET

Yildiz, Umut; Ozturk, Erdogan; Sefaoglu, Firat; Gul, Volkan; Toktay, Zehra

The storage of the harvested sugar beet (Beta vulgaris L.) before the processing stage is crucial, particularly regarding quality and durability. To maintain the quality of the beet prior to processing, appropriate storage conditions must be provided. Although siloing is a standard method for beet storage, this process may have some negative effects. Given the limited information on the impact of siloing on yield and quality, it is essential to determine the optimal duration of siloing. This study investigated the effect of different siloing periods on the root and weight and quality criteria of sugar beet in 2020 and 2021. Four siloing periods (immediately after harvest, ten days after harvest, 20 days after harvest, and 30 days after harvest) were analyzed. The siloing periods significantly affected both the root weight and quality criteria in both years of research. It was determined that the examined characteristics were significantly influenced by the treatments, with weight loss, dry matter content, sugar content, and sugar yield of roots increasing with the length of the siloing period. The results highlight the importance of the waiting time during the siloing period for sugar beet stored in silos after harvest. To minimize losses in the examined characteristics, it is recommended that the processing occur immediately after harvest. If it must be delayed processing is recommended between 10-20 days post-harvest.
