- MakaleAçık Erişim2026Scopus SJRQ1The effect of existing damage on the seismic performance of a historical masonry structure: a site-specific assessment
Tayfur, Bilal; Tunca, Osman; Artar, Musa; Çarbaş, Serdar
This study comprehensively evaluates the structural integrity and seismic performance of a historic masonry mosque, exhibiting significant settlement cracks, through an integrated approach combining field measurements and advanced numerical analyses. The Operational Modal Analysis (OMA) conducted to determine the dynamic characteristics of the structure. Field measurements revealed that the environmental vibrations originating from a nearby tram line causes significant amplitude incrase in one of the main columns. The dynamic characteristics of the structure obtained from field experiments are used to calibrate the numerical model via the Particle Swarm Optimization Algorithm. The calibrated numerical model, taking into account the existing cracks in the structure using contact elements, was subjected to nonlinear analysis in the time domain under 11 site-specific ground motion records selected in accordance with the procedures of the Turkish Building Seismic Code. This analysis examined the seismic performance and damage mechanisms of the structure. The findings revealed that while existing settlement cracks contribute to seismic energy dissipation through frictional sliding and gap opening mechanisms, they may also serve as potential failure initiation points under strong ground motions. This study’s integrated approach, combining dual-purpose OMA application and explicit crack modeling with contact elements, constitutes a novel methodological framework for the realistic seismic assessment of historic masonry structures with pre-existing damage.

Background: Aerobic capacity and respiratory efficiency are critical determinants of performance in elite female football, characterized by repeated high-intensity efforts and rapid recovery demands. Halotherapy, involving the inhalation of dry salt aerosol, has been shown to improve pulmonary health; however, its effects on exercise-related outcomes in athletic populations remain insufficiently investigated. This study aimed to examine the effects of a 12-week post-training halotherapy intervention on respiratory muscle strength, pulmonary function, and aerobic performance in elite female football players. Methods: Twenty-eight elite female football players competing in the Turkish Women’s First League were randomly assigned to a halotherapy group (HG, n = 14) or a control group (CG, n = 14). Both groups completed an identical preseason training program, while the HG additionally performed 45 min halotherapy sessions three times per week in a controlled halochamber. Pre- and post-intervention assessments included maximal inspiratory and expiratory pressures (MIP, MEP), spirometric parameters (FVC, FEV1, PEF, MVV), and maximal oxygen uptake (VO2max) estimated using the Yo-Yo Intermittent Recovery Test Level 1 (Yo-Yo IRT1), along with total distance covered. A 2 × 2 mixed-model ANOVA was used to assess time and group × time interaction effects. Results: Significant group × time interactions were observed for MIP, MEP, VO2max, FEV1, PEF, MVV, and Yo-Yo IRT1 performance (p < 0.05), with large effect sizes (ηp2 = 0.269–0.924), favoring the halotherapy group. Forced vital capacity (FVC) increased over time in both groups (p = 0.141), with no significant interaction effect. Changes in the control group were comparatively smaller across most outcomes. Conclusion: Post-training halotherapy was associated with improvements in respiratory muscle strength, ventilatory function, aerobic capacity, and intermittent running performance in elite female football players. These findings suggest that halotherapy may be considered as a complementary, non-invasive strategy to support respiratory and aerobic adaptations. Further research is required to confirm these findings and to clarify the underlying physiological mechanisms. Trial registration: NCT07406386; 6 February 2026.

Introduction – Folk dances, which are among the most important cultural elements reflecting societies’ historical heritage, ways of life, and shared values, are regarded not only as an art form but also as a functional tool that contributes to an individual’s psychological well-being. Because they are based on physical activity and involve group participation, they can positively impact empathy and anxiety. The primary objective of this study is to examine the psychosocial characteristics of individuals who participate in folk dances, with a focus on the relationship between empathy and anxiety. In this context, folk dance will be discussed from various perspectives in relation to empathy and anxiety. Materials and methods – The study employed the correlational survey model, a quantitative research method. The study included 358 participants interested in folk dances. Data were collected using the Empathic Tendencies Scale and the trait anxiety section of the State-Trait Anxiety Inventory. Statistical analyses included descriptive statistics, a normality test, Pearson correlation, and regression analysis. Results – A negative, significant, and weak correlation was observed between participants’ trait anxiety and their empathic tendencies. Results from the regression analysis reveal that participants’ empathic tendencies significantly predict their trait anxiety, explaining 10.7% of the total variance. Conclusion – In conclusion, folk dance may be considered a factor associated with individuals’ anxiety and empathy levels.

Individuals with intellectual disabilities and their parents, who encounter many barriers in daily life, may experience even more serious problems when faced with a devastating disaster such as an earthquake. For effective earthquake preparation, it is important to identify these problems before the earthquake. However, studies examining the earthquake experiences of individuals with intellectual disabilities and their parents are quite limited. In this context, the aim of the current study was to explore the experiences of parents of individuals with intellectual disabilities who were affected by the 2023 Kahramanmaraş earthquakes in Türkiye. This study used the phenomenological qualitative research design. In this study, there were 16 parents, who have children with intellectual disabilities and participated in face-to-face interviews. Interview data were analyzed thematically. Two overarching themes were found: (1) low level of earthquake preparedness, and (2) inaccessible needs. The findings revealed that the majority of parents of individuals with intellectual disabilities made few preparations for the earthquake, could not access many of their needs during and after the earthquake, and could not find a special unit for individuals with disabilities to explain their problems.

Glutathione reductase (GR) plays a crucial role in maintaining cellular redox balance and is a promising target for ferroptosis-based cancer therapies. In this study, we report the design, synthesis, and comprehensive evaluation of a novel series of 1,2,4-triazole–Schiff base succinate derivatives (AUR-514–518) as potent GR inhibitors. In vitro Mannervik assays revealed vigorous submicromolar inhibitory activity, with AUR-517 emerging as the most effective (IC50 = 0.471 ± 0.032 μM), significantly surpassing quercetin (IC50 = 214.5 ± 18.5 μM). Antioxidant profiling revealed negligible radical scavenging activity; however, modest CUPRAC responses suggest a target-specific mechanism. To elucidate the molecular determinants of inhibition, we employed deep-learning–assisted protein–ligand affinity predictions, molecular dynamics simulations, MM/GBSA free-energy calculations, and dimensional reduction analyses. These computational studies revealed dual binding modes at both the catalytic site and dimer interface, with AUR-517 forming stable interactions with key catalytic residues, consistent with experimental potency rankings. The RMSD/RMSF profiles indicated enhanced conformational stability of GR–ligand complexes, while binding energy landscapes underscored the superior stability of AUR-517. Consequently, these findings establish the AUR series as a new class of structurally validated GR inhibitors, with AUR-517 representing a lead scaffold for the rational development of ferroptosis-sensitizing agents with translational potential in oncology.

This study aimed to examine the effects of parent-child coparticipation in physical activity (PA) on the PA levels and fundamental motor skills (FMSs) of children with autism spectrum disorder. Participants were assigned to one of the following three groups: (a) a parent-child group (n = 14), (b) a child group (n = 13), and (c) a control group (n = 13). After 8 weeks of intervention, the within-group comparison revealed a significant increase in PA levels and FMSs in children with autism spectrum disorder in the parent-child group and the child group (p < .001). The between-group comparison further showed that children in the parent-child group had statistically higher scores for PA levels and FMSs than children in the child and control groups (p < .001). These findings suggest that parent-child coparticipation in PA may be a promising component of family-based interventions to promote PA and facilitate the acquisition of FMSs among children with autism spectrum disorder.

Terzi, Merve; Öner, Erdal; Uzun Yaylacı, Ecren; Oktay, Mine Gül; Yaylacı, Murat
Contact problems which concern the stress distribution resulting from the interaction between two elastic bodies have long been a focus of research. In the field of solid mechanics, they hold particular importance because loads are generally transmitted to deformable bodies through their points of contact. This study investigates the contact problem of a layered medium containing a homogeneous orthotropic layer and an isotropic half-plane using a multi-method approach. A rigid flat indenter is applied to the orthotropic layer with frictional effects neglected, while the influence of body forces in the orthotropic layer is taken into account. Key contact parameters such as the contact stress under the indenter, the initial separation load, and the point of initial separation are determined as part of the analysis. The study is structured into three main sections. In the first section, the problem is analytically examined based on classical elasticity theory. Within this framework, a singular integral equation governing the contact problem is derived and solved numerically. The second section presents a finite element analysis using ANSYS software to simulate the contact interaction and evaluate the stress distribution. In the third and final section, the problem is addressed through artificial neural network (ANN) techniques, offering a data-driven perspective. Ultimately, the results obtained from the analytical, numerical (FEM), and ANN-based methods are compared, showing excellent agreement across all approaches.

In this study, seventeen floral honey samples collected from Türkiye’s Çoruh Valley were examined and a total of 59 parameters were analyzed to evaluate their quality attributes. Accordingly, hydroxymethylfurfural (HMF), diastase activity, fructose, glucose, sucrose, total fructose + glucose (F + G), the fructose/glucose ratio (F/G), color and δ13C isotope values were determined together with amino acid profiles, organic acid composition, mineral contents, and phytohormone profiles. All chemical and biological data were evaluated using multivariate statistical approaches, including Principal Component Analysis (PCA), Pearson correlation analysis and Hierarchical Clustering Analysis (HCA), to characterize similarities and differences among the samples. The analytical results demonstrated that honeys from this region comply with established quality standards and exhibit natural purity, balanced chemical composition, and favorable nutritional properties. The detection of diverse phytohormone types and concentrations across the samples, as revealed by the analyses, indicates a rich biochemical signature originating from plant sources. This finding also highlights the functional properties, biological value, and nutritional significance of these honeys. Overall, the results confirm that the floral honeys obtained from Türkiye’s Çoruh Valley are high-quality products in terms of both chemical and biological properties.

Erten, Tayyibe; Cebeci Aydın, Fatma
Recovery of food ingredients from agro-industrial by-products has become increasingly essential for sustainable food production through energy saving and lessening the carbon footprint. Pickled white cabbage production generates high amounts of pickled cabbage waste that contain valuable goods such as pectin. This study aimed to evaluate the valorization of pectin from pickled cabbage waste by comparing the conventional (CE) and ultrasound-assisted extraction (UAE). The UAE provided 2.14 times higher pectin yield (30.32%) compared to CE (14.14%) while reducing energy consumption and carbon dioxide emission (~ 7 times lower). Pectins obtained from conventional extraction (CEP) and ultrasound-assisted extraction (UEP) had high amounts of galacturonic acid (85.06 ± 1.76%, 87.95 ± 6.99%, respectively) and low degree of esterification (17.08 ± 1.14%, 14.71 ± 0.00%). The monosaccharide compositions of pectin were similar for CEP and UEP, comprising of galacturonic acid, glucose, arabinose, rhamnose and xylose. FT-IR, NMR and SEM confirmed the structural characteristics of pectins, and the effect of ultrasonication. Furthermore, UEP presented superior technological characteristics including water holding capacity (5.29 ± 0.38 g water/g pectin), oil holding capacity (1.58 ± 0.11 g oil/g pectin), emulsion activity (43.61 ± 1.12%) and emulsion stability compared to CEP. These findings show that pickled cabbage waste is a valuable source of low-methoxyl pectins and UAE is a promising extraction method for obtaining high amount of pectin along with reduced processing time and energy consumption. The UAE method using of citric acid instead of hazardous acids also offers environment-friendly method for pectin extraction.

Yarımkaya, Erkan; Aydemir, Uğur
Purpose: Advances in artificial intelligence (AI) have led to the increasing use of chatbots to promote physical activity (PA) through personalised guidance and interactive feedback. However, little is known about how AI chatbots can support parents of individuals with autism spectrum disorder (ASD) in promoting home-based PA. Understanding parents’ perspectives on the use of AI chatbots to promote PA may be critical for designing practical guidance and interventions for individuals with ASD. Therefore, the present study aimed to examine parents’ perspectives on the use of AI chatbots to promote PA among individuals with ASD using the Theory of Planned Behaviour (TpB). Method: Participants in this descriptive qualitative study were 16 parents (13 females and 3 males) who participated in one-on-one semi-structured interviews. The interviews were transcribed for analysis and later analysed using thematic line-by-line analysis. Results: The findings revealed that parents had positive attitudes towards the use of AI chatbots to promote PA among individuals with ASD. According to parents, AI chatbots were useful for learning new information about PA and increasing PA levels among individuals with ASD. On the other hand, parents stated that AI chatbots did not provide much detail about some PAs and that they did not understand some PA terms. Therefore, parents stated that they repeatedly gave AI chatbots commands/prompts for each PA and often needed expert support. Conclusions: Results indicated a need for guidance to parents on the use of AI chatbots to promote PA among individuals with ASD.

Background and Objectives: This study investigated the efficacy of eccentric isokinetic muscle strengthening versus passive motion protocols on neuromuscular function and performance capacity in female swimmers with chronic lateral epicondylitis. Materials and Methods: Twenty-five swimmers (age 46.1 ± 3.1 years) with lateral epicondylitis exceeding three months’ duration completed a randomized controlled trial comparing eccentric training in Controlled Active Motion mode (experimental group (EG), n = 13) against passive motion in Continuous Passive Motion mode (control group (CG), n = 12). Both groups performed 18 supervised sessions over six weeks (60°/s angular velocity, progressive loading 1–12 sets × 5 repetitions). Bilateral concentric peak torque of elbow extensors and flexors constituted the primary outcomes. Secondary measures included push-up performance, explosive power assessed by the Seated Medicine Ball Chest Push Test, and goniometric range of motion. Linear mixed-effects models and analysis of covariance with baseline adjustment were employed. Results: Eccentric training produced side-specific strength adaptations in elbow flexors (confirmed interaction: F1,23 = 8.56, p = 0.008, ηp2 = 0.271), with the experimental group demonstrating balanced bilateral gains, whereas the control group exhibited asymmetric responses favoring the non-dominant limb. EG demonstrated superior functional gains: push-up repetitions increased 4.15 ± 1.77 versus 2.17 ± 1.27 in CG (adjusted difference = 3.21 repetitions, 95% CI [1.52, 4.90], p = 0.001, d = 1.31), while explosive power improved 0.32 ± 0.09 m versus 0.10 ± 0.06 m (adjusted difference = 0.35 m, 95% CI [0.25, 0.45], p < 0.001, d = 1.20). Range of motion remained unchanged across groups (all p > 0.65). Conclusions: Eccentric isokinetic strengthening confers substantial advantages over passive motion protocols for restoring upper-body muscular endurance and ballistic force production in swimmers with lateral epicondylitis, supporting its integration into rehabilitation frameworks for the management of tendinopathy.

Cuce, Erdem; Cuce, Pinar Mert; Guclu, Tamer
This study presents the design, fabrication, and experimental evaluation of a novel passive thermal management system for photovoltaic (PV) modules that integrates a bio-inspired aluminium heatsink with a nanoparticle-doped phase change material (PCM). The proposed configuration aims to regulate the temperature of the PV module under real outdoor conditions without any external energy input. The bio-inspired heatsink was designed based on coral-like branching geometry to enhance natural convection and heat distribution within the PCM. The PCM, doped with metal-oxide nanoparticles (Al2O3, SiO2, TiO2) at a 2% mass fraction, provided additional latent-heat storage capacity and improved thermal conductivity. Experimental tests were conducted using two identical monocrystalline PV panels. The results demonstrated that the bio-inspired-cooled PV module effectively reduced surface temperature fluctuations by 8–15 °C and achieved a maximum efficiency improvement of 9.2% compared to the uncooled configuration. The integration of the PCM layer with the bio-inspired heatsink maintained a more stable operating temperature throughout the day, particularly during high-irradiance conditions. Hourly I-V and P-V analyses confirmed that the hybrid module consistently exhibited higher maximum power and efficiency values. Furthermore, the estimated energy yield analysis revealed that the average efficiency gain of 5.6% achieved under outdoor conditions could lead to a substantial increase in annual energy production. Overall, the hybrid bio-inspired fins + PCM system offers a sustainable, self-regulating, and energy-free cooling solution that enhances both the performance and durability of PV modules.

İspirli, Hümeyra; Kavak, Akif Emre; Dertli, Enes
Lactic Acid Bacteria (LAB) from traditional fermented foods serve as a promising source of novel exopolysaccharides (EPSs) with desirable techno-functional properties. In this study, the EPS production ability of LAB strains from traditional pickles was tested and a strong slimy isolate grown in a sucrose-rich environment was further selected. The isolate was identified as Leuconostoc mesenteroides VB113 and its EPS production characteristics were determined. HPLC analysis revealed that glucose was the only monomer in the EPS repeating structure, whereas 1H and 13C NMR spectroscopy analysis demonstrated a branched dextran structure with 20% (1 → 3)-linked α-D-glucose units. Dextran VB113 showed a molecular weight of 2.4 × 106 Da tested by GPC analysis. The functional groups within dextran VB113 were determined by FTIR analysis, and XRD analysis demonstrated its amorphous physical status. TGA and DSC analysis were applied for thermal characterization and a degradation temperature of 272.25 °C was observed for dextran VB113, suggesting its high thermal resistance. The micro-structural features of dextran VB113 were tested by SEM and AFM analysis that revealed spherical and fibrillary properties, respectively. These findings revealed the importance of testing different niches to obtain novel EPS-producing LAB strains that can be further evaluated to enhance the techno-functional properties of food systems. The branched nature of dextran VB113, together with its molecular weight and thermal characteristics, offers practical advantages for its potential usage as a thermal-stable thickening agent, emulsion stabilizer, and fat replacer in high-temperature food processing applications, such as bakery products, processed dairy, and plant-based meat analogs.

- MakaleYalnız künye2026Scopus SJRQ2Weathering effects on pendulum hardness, and pull-off adhesion testing of water-based varnish on thermally treated iroko wood
Ulay, Göksel; Akter, Mete; Çakıcıer, Nevzat; Ayata, Ümit
This study evaluated the effects of different weathering durations (168, 336, and 504 h) on surface hardness and adhesion strength of both heat-treated (1.5 h at 190 °C and 2 h at 212 °C) and untreated iroko (Chlorophora excelsa) wood surfaces after application of water-based varnish (WBV). Pendulum hardness (s) and pull-off adhesion (MPa) tests were performed after weathering. According to the results, in the untreated control group, hardness increased from 30 s to 45 s after 504 h of weathering, showing a 48% increase. In the samples treated at 190 °C, hardness increased from 25 s to 41 s after 504 h, showing a 61% increase. The highest increase was observed in the samples treated at 212 °C. Here, the hardness increased from 23 s to 44 s, representing a 91% increase after 504 h of weathering. The highest initial surface adhesion strength (5.30 MPa) was obtained in the unheated samples; however, this value decreased significantly after weathering. Although the initial adhesion strength was lower in the heat-treated samples, those treated at 212 °C for 2 h exhibited more stable weathering performance. The results show that the acceleration of weathering and the application of heat significantly affect the effectiveness of the varnish coating.
- Derleme MakaleAçık Erişim2026Scopus SJRQ2From Technology Adoption to Organizational Governance: Mapping the Intellectual Structure and Shifting Paradigms of AI Governance in Educational Leadership
Kayalı, Bünyami; Yavuz, Mehmet; Bozkurt, Aras
This study maps the intellectual structure and thematic evolution of the intersection between artificial intelligence (AI) and educational leadership in related literature. Employing a hybrid research design that integrates bibliometric analysis with Latent Dirichlet Allocation (LDA)-based topic modeling, we examined 757 unique records retrieved from the Web of Science and Scopus databases for the period 2017–2026. Through computational optimization, the corpus was delineated into six emerging research themes that dictate the field’s shifting paradigms: “Digital Leadership & Transformation,” “Teaching & Student Learning,” “AI Acceptance & Self-Efficacy,” “Data Management & Machine Learning,” “School Leadership & Principals,” and “Technical & Computational Fields.” While “Digital Leadership & Transformation” dominates over half of the literature, a sharp proportional decline in “School Leadership & Principals” uncovers a critical structural imbalance between abstract institutional transformation discourse and the actual human agents executing it. Furthermore, a severe underrepresentation of technical, governance, and transparency themes exposes a critical “opaque box” crisis of institutional agency. The study concludes that the field remains theoretically fragmented and calls for an integrated socio-technical framework reconciling leadership governance with the complex realities of AI systems.

Objective: This study compared the acute effects of caffeine capsule ingestion and caffeine mouth rinsing on physical performance and volleyball-specific skills at different times of day in trained adolescent male volleyball players. Methods: Twenty-four well-trained male volleyball players (age: 16.9 ± 0.7 years) completed a randomized, double-blind, placebo-controlled crossover study involving three supplementation conditions, caffeine capsule (CAFcap, 3 mg·kg−1), caffeine mouth rinse (CAFrinse, 3 mg·kg−1), and placebo (PLA), administered via a double-dummy procedure (nine sessions per participant: 3 conditions × 3 times of day) at 08:00, 12:00, and 18:00. Participants completed squat jump (SJ), countermovement jump (CMJ), block jump, attack jump, 10 × 10 m t-test, spike accuracy, and serve accuracy assessments. Data were analyzed using two-way repeated-measures ANOVA. Results: Significant main effects of condition and time of day were observed for all outcomes. Significant condition × time-of-day interactions were found for SJ, CMJ, attack jump, and change-of-direction speed, indicating that caffeine-related ergogenic effects were most evident in the morning and at midday, whereas these benefits were attenuated in the evening when baseline performance was highest. At 08:00 and 12:00, both CAFcap and CAFrinse improved jump performance and agility compared with PLA, with capsule ingestion showing a small-to-moderate advantage over mouth rinsing for selected lower-limb power outcomes at midday (mean difference range: 0.51–0.57 cm; dz = 0.57–0.65). For block jump, spike accuracy, and serve accuracy, both caffeine conditions improved performance relative to placebo, while a progressive improvement across the day was observed under all conditions, including placebo, confirming a diurnal rhythm effect independent of supplementation. Overall, the data indicate that caffeine partially reduced the amplitude of diurnal variation in several physical performance measures. Conclusions: Both caffeine capsule ingestion and caffeine mouth rinsing enhanced physical and volleyball-specific performance in trained adolescent male volleyball players. The ergogenic effects were more pronounced earlier in the day, suggesting that caffeine may be particularly useful for attenuating morning and midday performance decrements, while mouth rinsing represents a practical non-ingestive alternative with meaningful efficacy.

- MakaleAçık Erişim2026Scopus SJRQ1Perceptions of Electoral Trustworthiness in Turkey a Qualitative Study Based on Political Party Representatives
Kan, Muhammed Enes; Bilgili, Murat Saltuk
Electoral trustworthiness -the safeguarding of electoral processes from distortions, violations, and manipulations- is fundamental to democratic integrity. In emerging democracies such as Turkey, political parties are key actors, shaping and monitoring elections while gaining experience across pre-election, election day, and post-election stages. This study examines political parties’ perceptions of electoral trustworthiness in Turkey through a qualitative provincial case study situated within the Turkish context using semi-structured interviews with provincial, district, and vice-chairs from various parties in a selected province. Data were analyzed via content analysis. Findings suggest that, within the studied province, pre-election concerns involve campaign irregularities, voter pressure, and legislative gaps; election day issues include voter intimidation, limited polling station oversight -especially in rural areas- and challenges for opposition parties in appointing officials and observers; post-election concerns relate to transparency and impartiality of electoral bodies, lack of judicial review over Supreme Election Council decisions, and procedural flaws. These point to an urgent need for reforms and stronger oversight. © The Author(s) 2026. - Derleme MakaleAçık Erişim2026Scopus SJRQ1The role of biotics and bioactive compounds in sports injuries: a narrative review
Şahin-Demirci, Kezban; Dal, Nursel; Gönen-Çolak, Buket; Akman, Onur; Raposa, Bence; Ağagündüz, Duygu
Sports injuries affect not just the physical, but also the psychological, social, and professional aspects of athletes’ lives. Preventive strategies, nutrition, and nutritional supplements—especially biotics and bioactive compounds—are crucial for recovery and may help prevent injury recurrence. This review examines biotics and bioactive compounds that may be effective on sports injuries, revealing their potential benefits and safety of use. Using a comparative and interpretive approach, the pertinent literature was thoroughly examined for this review, with a special focus on clinical and preclinical research conducted within the last 5 years. Bioactive compounds and biotics (prebiotics: indigestible substances that support beneficial bacteria; probiotics: live beneficial microorganisms; postbiotics: bioactive microbial metabolites) can improve sports-related injuries by affecting inflammation, mitochondrial function, biogenesis, oxidative stress, and atrophy. Biotics achieve these systemic effects by improving intestinal barrier function and modulating the microbiota. Current literature indicates that some compounds show promise for treating sports injuries, but human study evidence is limited. Animal models provide useful insights for future research. Finally, polyphenolic compounds, amino acids/peptides, and w-3 fatty acids, thanks to their anti-inflammatory and antioxidant properties, can indirectly contribute to muscle regeneration and cell repair, thus supporting the recovery process in athletes. However, it is still too early to make recommendations regarding the use of biotics and bioactive compounds in sports injuries.
- MakaleYalnız künye2026Scopus SJRQ2Microwave-assisted extraction of pectin from persimmon: physicochemical properties, structural characterization and greenness assessment
Yılmaz, Özlem; Kutlu, Naciye; Kamiloğlu, Aybike; Elbir Abca, Tuğba
In this study, the microwave-assisted extraction (MAE) of pectin from persimmon was optimized using a Box-Behnken experimental design, with pH, extraction time, and liquid-to-solid ratio as independent variables. The optimization results obtained through response surface methodology indicated optimum conditions of pH 1.78, extraction time of 8 min, and a liquid-to-solid ratio of 125 mL/g, corresponding to a predicted pectin yield of 4.28%. In the validation experiment, the actual pectin yield was determined to be 3.79 ± 0.04%, confirming a good agreement with the model predictions. The degree of esterification, methoxyl content, galacturonic acid and ash contents, water- and oil-holding capacities, antioxidant activity, rheological behavior, and structural properties (FT-IR, DSC, and 1H NMR) of the samples obtained under optimal MAE and conventional extraction conditions were compared. Based on the degree of esterification, both samples were classified as high-methoxyl, with galacturonic acid contents of 41% and 42% for the MAE and conventionally extracted samples, respectively; both values were below the ≥ 65% level specified for commercial food-grade pectin. The ash content was higher in the MAE sample (7.22%) than in the conventionally extracted sample (1.56%). MAE resulted in a pectin-rich complex with a relatively low galacturonic acid content and higher antioxidant activity than the conventionally extracted sample. Furthermore, the MAE sample exhibited higher water-holding capacity but lower oil-binding capacity than the conventionally extracted sample. Rheological analysis showed that the MAE sample exhibited higher apparent viscosity and shear stress than the conventionally extracted sample. FT-IR analysis revealed more pronounced absorption bands in the MAE sample, suggesting structural differences. DSC analysis revealed differences in the thermal behavior of the MAE and conventionally extracted samples. Additionally, 1H NMR analysis supported the presence of characteristic pectic structural features in both samples. The greenness assessment of the method was assessed using the Greenness Evaluation Metric for Analytical Methods (GEMAM), which yielded an overall score of 7.482, indicating a high level of environmental acceptability. Overall, MAE can be considered an efficient and sustainable approach for obtaining a pectin-rich complex with antioxidant activity from persimmon.
