Esmer, Yusuf; Aribaş, Ayşe Nihan
The emergence of globalization due to information technologies and the changes and/or developments brought about by globalization require organizations to have more knowledge about ethics and therefore to be more interested in this issue. The use of information and communication technologies in organizations in accordance with ethical values is considered important in terms of the integrity, functioning, and efficiency of both employees and organizations. Individuals, managers, organizations, and researchers have important duties in the field of information ethics in order to prevent the making of difficult mistakes that will adversely affect individuals and organizations during the use of information technologies. In this context, information ethics has been examined in this study in the context of recent developments all over the world, especially the developments in the global COVID-19 pandemic process.
- Kitap BölümüAçık Erişim2023Trajectory Tracking Control of an Unmanned Ground Vehicle Based on Fractional Order Terminal Sliding Mode Controller
Sekban, Hayriye Tuğba; Başçi, Abdullah
In this chapter, fractional order terminal sliding mode control (FOTSMC) method, which is a hybrid control approach, is used to improve the trajectory tracking control performance of an unmanned ground vehicle (UGV). First, a kinematic controller design has been carried out to estimate the linear and angular velocities that will stabilize the vehicle asymptotically. Then, FOTSMC, which is a hybrid control method that combines the advantages of fractional control and terminal sliding mode control methods, is proposed to perform vehicle reference velocities tracking. In addition, terminal sliding mode control (TSMC) and sliding mode control (SMC) methods are used for trajectory tracking control of the same vehicle to demonstrate the performance of the proposed controller. Simulation results show that the proposed controller performs trajectory tracking with smaller error and lower amplitude chattering compared to TSMC and SMC.
- Kitap BölümüAçık Erişim2023Cross-cultural difference and spirituality in the workplace
Kalkan, Nimet; Şükür, Fatma Betül
This chapter aims to consider workplace spirituality from a cross-cultural perspective. The terms workplace spirituality and culture are so intangible, and both start with the attitude and behavior of humans but are meaningful in a community. Because of the constraint of understanding these abstract settings, it is necessary to define and specify the dimensions of both concepts to achieve the aim of this chapter. In this regard, the section starts with the conceptuality of workplace spirituality and the dimensions of the term, which cumulate at individual, group, and organizational levels. It goes with the part of cultural dimensions in the light of Hofstede's (2001) direction, Chhokar, Brodbeck, and House's (2007) extension, and Sharma's (2010) derivation of cultural dimensions for national, organizational, and individual levels, respectively. After joining the dots, the chapter focuses on one of the most sacred research areas for academic literature, cross-cultural differences, and workplace spirituality. The last part of the chapter is the conclusion to point to final notes about the concepts and help guide future studies.

- Kitap BölümüYalnız künye2022Gut effect on phytochemicals
Cebeci, Fatma
The gut microbiota play an important role for host nutritional, physiological, immunological functions like food digestion, vitamin production, protection of gut integrity, regulation of host immunity, and disease pathogenesis. Dietary phytochemicals are important factors to shape and change the human gut microbiota composition in diversity and abundance context. On the other hand, the microbial community of the gut provides a broad range of enzymes to host which are different from its own resources. This enables human gut microbiota to affect and direct the biosynthesis and metabolism of many bioactive compounds. Bioavailability of phytochemicals is important to benefit from health conferring effects of these compounds. Most of the phytochemicals are not absorbed well by the small intestine and pass through to the gut then gut microbiota acts on the compounds to form different metabolites. Therefore, elucidating the role of human gut microbiota on phytochemical metabolism is essential. This chapter discusses the studies reporting the gut microbial effect on different phytochemicals.
- Kitap BölümüYalnız künye2022Regulation of Natural Food Additives
Öztekin, Sebahat; Anaya, Katya; Yurdunuseven-Yildiz, Aysun
The use of natural ingredients in food formulation has been facing an increasing demand worldwide. Aiming to preserve the consumer’s health and provide better guidance to the food industry, regulatory agencies must propose precise definitions and establish safe limits of use for additives of natural origin. In this book chapter, we discuss the lack of specific regulations for natural additives and list the substances currently approved by two important regulatory agencies in the globe: the European Food Safety Authority (EFSA) and the Food and Drug Administration (FDA) from the United States. Other regulatory documents from Asia, Australia, and South America are briefly mentioned. Clearly, there is a need for an international regulatory consensus to minimize ambiguity around the term ʼnatural’ with a better understanding of what the term “natural” meant and how it can be applied to food labelling and international trade.

- Kitap BölümüYalnız künye2022Discrimination in the Employment Process
Yurttas, Süleyman
Discrimination is a phenomenon that feeds on attitudes, prejudices and stereotypes, embodies itself with behaviors, and spreads to the whole of daily life. When business life and the recruitment process in particular are considered as a part of daily life, it can be said that it is “normal” to see discrimination practices here as well. Even in a very simple news search on the Internet, it is possible to see the problems experienced by individuals who are discriminated against in the recruitment process due to their age, religious belief, gender, sexual orientation, hometown or even pregnancy. This phenomenon, which is inevitably encountered in Turkey, also manifests itself in institutionalized companies. 900 thousand people are employed in the organized food retail market throughout Turkey. Employment is increasing by around 20 thousand every year (www.dunya.com). Chain stores such as A101, BIM and Sok operating in Turkey provide considerable employment in the organized food retail market. These companies, which increase their employment with their market shares, carry out their recruitment processes through regional managers. This shows that the discrimination practices that appear in recruitment have individual sources and that the attitudes, prejudices and stereotypes of the responsible person are effective. The aforementioned chain stores, which have great power in the Turkish market, increase the number employed day by day, and this situation also causes the discrimination potential to grow in the recruitment processes. Examining the recruitment processes carried out in these chain stores and revealing the discrimination practices will be beneficial in terms of both identifying the existing problems and taking the necessary measures to prevent discrimination. The aim of this study is to reveal the discrimination practices seen in the recruitment processes in chain stores. In the research, semi-structured interviews were conducted with the regional managers who are responsible for recruitment in the relevant chain store markets. In addition, the relevant literature has been included in order to reveal the relationship between recruitment processes and discrimination, and information about the recruitment processes of chain stores has been shared.
- Kitap BölümüYalnız künye2022Scopus SJRQ4Initial Responses to COVID-19 Pandemic in Turkey: General, Financial, and Legal Measures
Göçoğlu, Volkan; Şengün, Hayriye
The COVID-19 pandemic started in Wuhan, China, and spread to almost all over the world in four months. As pandemic cases began to be detected and increased in countries, governments have started to pursue various policies such as closing the city and country borders, social distance practices, the prohibition of going out, and creating herd immunity. Especially with the closure measures implemented, the countries’ financial systems have been adversely affected, and many sectors have suffered losses. On the other hand, the provision of public services in countries has become more complex. Therefore, countries have taken several measures to maintain their public services without interruption. Legal services are one of the essential services affected by this situation. This study deals with the general, financial and legal measures that Turkey has adopted to combat against COVID-19 pandemic. As a result of the study, while the functional features that stand out in the measures are presented, some suggestions are made for a better crisis management.
- Kitap BölümüYalnız künye2022Non-Family Managers and HR Practices of Family Firms
Yazici, Ömer
Family firms have one special factor that makes them unique and competitive compared to non-family firms, and that is family involvement. Family firms are composed of management, family, and ownership. While this composition often has many advantages, it also has some downfalls. Family involvement has a significant impact on the behavior of the company, more specifically on the human resource (HR) management practices of the company. As a result, family firms have to deal with nepotism, self-dealing, and entrenched management issues to hire and retain professional non-family managers and other white-collar workers. Family firms are intended to be the career center for family employees (Bloemen-Bekx et al. 2019). Therefore, family firms have different HR compositions. There are mainly three types of employees in family firms; first, the shareholder family members and their heir (ownership), second, the other family members and relatives (family), and third, the non-family employees (management). Non-family employees are divided into two categories, managers and workers. Although family firms have a tendency to assign family members to crucial positions at the firm (Deloitte and Touche Study 1999), non-family employees are hired for other executive and managerial positions, which is more crucial for family firms (Chua et al. 2003). Considering all these challenges and difficulties due to family involvement in employee relations, researchers raise the question of whether “family firms are good employers” (Neckebrouck et al. 2018). Family firms diverge from non-family firms with their long-term orientation and caring approach to their employees. This caring approach is proven in downsizing studies. Researchers show that during crises and downsizing practices, family firms lay off fewer employees than non-family firms (Stavrou et al. 2007). Non-family employees are keystones of the family firm’s growth and necessary for each growing family firm. Therefore, the employment of non-family members will affect the sustainability of the firm. While it is important for all types of companies, it is crucial for family firms to have committed and devoted non-family employees. Hiring non-family managers is usually a result of a limited family employee presence during the growth of the company. Controlling growth due to a limited family member presence and running a firm with only family managers would result in informal structures, peculiar culture, and limited growth. Non-family managers are sometimes hired as conflict resolution when there is a conflict of interest during the employment of family members (Lubatkin et al. 2005). Hence mostly non-family managers are hired if there is a formalization process in progress (Zhang and Ma 2009). Also, most first non-family managers in the firm are CEOs. Furthermore, family firms with financial struggles tend to employ a non-family CEO rather than a family CEO (Bocatto et al. 2010). According to a study done with Italian firms, family firms prefer to nominate non-family CEOs rather than family CEOs (Salvato et al. 2012). Additionally, in growth times, family firms also prefer non-family CEOs over family CEOs. In conclusion, while family firms are able to fill managerial positions, it is empirically shown that the growth of family firms is correlated with non-family managers (Fang et al. 2015).
- Kitap BölümüYalnız künye2022Safety Aspects of Non-Thermal Processing Applications for Fruit and Vegetable Processing
Devecioglu, Dilara; Dikmetas, Dilara Nur; Oztekin, Sebahat; Karbancioglu-Guler, Funda
This chapter primarily examines the most widely applied non-thermal processes to fruits and vegetables from a food safety perspective. In addition to microbial contaminants, which cause the consumption of these food products to be risky, pesticides, toxins, and process contaminants are included in the relevant headings. It is seen that although the results vary according to the process condition and the studied product, each applied process offers significant advantages in itself. The effectiveness of cold plasma, irradiation, high hydrostatic pressure, ozone, pulsed electric field, pulsed light, supercritical carbon dioxide, and ultrasound processes is emphasized in ensuring food safety for fruits and vegetables. In addition, parameters such as quality and sensory that may be affected by the process application are also mentioned, and the potential of processes for application is explained.
- Kitap BölümüAçık Erişim2022Methods of fabrication of bionanocomposites
Cuce, Pinar Mert; Cuce, Erdem; Guclu, Tamer
Petrochemical-based plastic packaging materials that cannot be biodegradable and remain intact in nature for many years and the continuous proliferation of these materials as waste has become an international problem. As a result of this problem, bionanocomposites produced from biodegradable materials represent a new class of nanosized materials with various uses, from various daily uses to food packaging applications. It consists of a biobased component and at least one-dimensional nanosized particles. It differs from nanocomposites with fundamental differences such as preparation methods, functions, biodegradability, biocompatibility, and obtaining methods. In the presented study, the production methods of bionanocomposites are explained with some examples obtained by these methods. Generally, there are four main production methods: in situ intercalative polymerization, solution intercalation, template synthesis, and melt intercalation. With these methods, bionanocomposites can be produced that are homogeneously dispersed and provide major enhancements in mechanical, thermal and water vapor barrier characteristics compared to base polymers. It is capital to use the appropriate method and to make the correct synthesis according to the base polymer used and the type of nanoparticle added, to obtain a homogeneous and nonagglomerated bionanocomposite synthesis.

- Kitap BölümüAçık Erişim2022Scopus SJRQ3Optimum Discrete Design of Steel Planar Trusses Comprising Earthquake Load Impact
Carbas, Serdar; Artar, Musa; Kim, JH; Deep, K; Geem, ZW; Sadollah, A; Yadav, A
In this study, the success of teaching–learning-based optimization (TLBO) and biogeography-based optimization (BBO) metaheuristic methods in optimum discrete sizing design of a steel planar truss comprising earthquake load impact has been investigated. To do this, a 46-element steel planar truss has been handled as a design example. Like many other stochastic optimization methods, the TLBO and BBO techniques imitate specific natural events. In TLBO, the processes are carried out by mimicking a class consisting of teachers and students; on the other hand, the BBO simulates the distribution of species in nature based on biodiversity. The stress and displacement constraints in American Institute of Steel Construction-Allowable Stress Design (AISC-ASD) provisions are considered as structural behavior constraints. Both algorithms select design profiles from a discrete list containing steel W-shaped sections. For obtaining the minimum weighted optimum structural design, the algorithms encoded in MATLAB are supplied with open application programming interface (OAPI) functions that enable mutual data transfer with a structural analysis software (SAP2000) to practically get the structural responses under the effect of load combinations containing earthquake load. The optimal truss designs yielded with TLBO and BBO algorithms are compared with those already existed in the literature. Accordingly, it has been concluded that the TLBO and BBO algorithms give successful solutions.

- Kitap BölümüYalnız künye2022Foreign Language Apprehension and Interview Success
Dolgunsöz, Emrah
A job interview (or employment interview) is a common hiring method involving a conversation between a job applicant (interviewee) and a representative of an employer (interviewer) which is conducted to assess and evaluate the suitability of the applicant for the job (Dipboye, Macan and Shahani-Denning 2012). Depending on the company profile, the type of position and the job requirements, applicants are assessed and evaluated by companies in various dimensions ranging from presentability to academic efficiency. Although the criteria of companies vary a lot, all interviews engender a phenomenon called interview anxiety. It is generally the sum of annoying and unpleasant feelings before or during a job interview (McCarthy and Goffin 2004) due to reasons such as lack of control during interviews (Jones and Pinkney 1989) or being evaluated by a stranger in an interactional environment (Ayres et al. 1998). Common symptoms of interview anxiety manifest in long and frequent pauses while talking, slow speech or licking lips (Feiler and Powell 2016). Besides the regular procedures of employment interviews, global companies operating in non-English-speaking countries also assess the English language competency of the applicants during interviews. These companies value proficiency in English and it is a vital prerequisite of international communication for these types of companies. Foreign language (mostly English) assessment commonly focuses on the oral skills of the applicants and how good they are at communicating in the English language. The inclusion of this evaluation in job interviews certainly has merit; however, it also has the potential to increase the anxiety experienced during interviews due to the phenomenon called foreign language anxiety (FLA). Anxiety, in general, is defined as a common subjective feeling of unease, discomfort, and worry often accompanied by some physiological symptoms. FLA refers to the specific type of anxiety that emerges in a foreign language context (MacIntyre 1999). FLA causes low foreign language performance causing anxious individuals to commit various linguistic and phonological errors. Considering that employment interviews are already anxiety-provoking processes, this study hypothesizes that the inclusion of foreign language assessment during interviews elevates anxiety due to FLA, and aims to examine how this experience affects employment interview success.
- Kitap BölümüYalnız künye2022Reflections on sustainable consumption in the time of the COVID-19 pandemic
Yildiz, Tuğba; Başar, Enes Emre
The COVID-19 pandemic, which has caused severe diseases and deaths around the world, impacts not only health, but also daily lives, economies, and social systems. It is observed that consumers' purchasing patterns and preferences have changed significantly along with the new normal brought by the pandemic. For example, tons of plastic waste each day caused by disposable masks used to prevent the spread of viruses and the dramatic increase in disposable plastic tableware waste caused by the increasing number of food deliveries and takeaway meals as a result of measures such as social distancing and quarantine lead to significant environmental concerns. Furthermore, the additional packaging waste generated by e-commerce trades, which increases incrementally every day, is also an important source of environmental concerns. Although a growing number of consumers are interested in preserving the environment and participating more actively in sustainable consumption around the world, the changes caused by COVID-19 in their lives deeply affect sustainable consumption behaviors. Therefore, the discussion of how sustainable consumption behaviors of consumers are affected during the pandemic may contribute to the development of new strategies in this field. From this point of view, the effects of environmental concerns and sensitivity on sustainable consumption were first discussed from different aspects in this section. Then, the reflection of the pandemic on consumer behaviors was analyzed within a general framework. Finally, how the pandemic influenced the tendency toward sustainability was revealed.
- Kitap BölümüAçık Erişim2022Poverty and City Safety
Alacadağli, Esmeray
Children are people’s gateway to the future; they are 30.3% of the world’s population. Childhood is a stage that has a great impact on adulthood and children being healthy individuals. For this reason, child poverty and childhood conditions are very important for individual and community life. Cities are places where people live, and more than 50% of the world’s population lives there. In the cities, whose numbers and sizes have increased over time, the crimes committed have also increased and diversified. For this reason, it has become increasingly difficult to provide urban security today. The aim of this study is to show the relationship between child poverty and urban safety, by carrying out an overview of the global perspective and examining the case of Turkey. - Kitap BölümüYalnız künye2022Diplomatic transformation of series narrative: Velvet evolution of representation from valley of the wolves to valley of the wolves-ambush
Keskin, Savaş
In addition to what the studies on the discourse and character modeling of the Valley of the Wolves series say, this chapter argues that there has been a Neo-Ottomanization and religiosity evolution in terms of the discourse and the hero's semiosis. The thesis of this section is that Valley of the Wolves series has evolved in terms of narrative and character since it began to appeal to international target audiences. It is the main assumption of the section that there is a parallel transformation with the public diplomacy practices of the Republic of Turkiye in the process following the fact that the audience groups, especially in Arab geography, Afghanistan and Pakistan, where Islamic influence is dominant, become fans of the Valley of the Wolves. In this section, it is aimed to explain the velvet evolution, which exemplifies the transition from the Republican ideology to the Neo-Ottoman ideology in diplomatic media narratives, through the historical rupture of the Valley of the Wolves.
