Sönmez Sari, Ebru; Terzi, Handan
Aim: To understand the experiences and coping strategies of nursing students who were impacted by Turkey's once-in-a-century catastrophic earthquakes in 2023. Background: Nursing students rarely experience a disaster in person, and their imagination can be limited. Methods: This study used a descriptive-qualitative study design. It was conducted with 17 first-year nursing students, studying at a university in the northeastern part of Turkey, who survived the earthquake. A personal information form and a semistructured questionnaire were used to collect the data. The data were collected between March and April 2023 and analyzed using the content analysis method and the MaXQDA programme. Results: The data were grouped into three main themes—“What ‘earthquake’ was and what it is now?,” “Am I aware of the ‘earthquake’ now?,” and “Coping mechanisms and supporting systems”—and categorized into seven subthemes. Conclusions: The experiences of earthquake-affected nursing students emphasized the importance of being prepared for disasters and meeting their emotional needs. Implications for nursing practice and policies: Including specific courses and case studies regarding disasters, whether natural or human-made, in education programs can ensure better prepared nurses. Also, the integration of content about management and coping with such crises into nursing curricula is considered vital.

- Derleme MakaleAçık Erişim2025Scopus SJRQ1Thawing frozen foods: A comparative review of traditional and innovative methods
Çalışkan Koç, Gülşah; Özkan Karabacak, Azime; Süfer, Özge; Adal, Samiye; Çelebi, Yasemin; Delikanlı Kıyak, Berrak; Öztekin, Sebahat
Due to the changing consumer lifestyles, the tendency to adopt foods that require less preparation time and offer both variety and convenience has played a significant role in the development of the frozen food industry. Freezing is one of the fundamental food preservation techniques, as it maintains high product quality. Freezing reduces chemical and enzymatic reactions, lowers water activity, and prevents microbial growth, thereby extending the shelf life of foods. The freezing and thawing procedures directly impact the quality of frozen foods. The degree of tissue damage is determined by the freezing rate and the structure of the ice crystals that form during the freezing process. Generally, thawing occurs more slowly than freezing. During thawing, microorganisms, as well as chemical and physical changes, can cause nutrient damage. Thus, the goal of this review is to identify innovative and optimal thawing strategies. In order to save energy and/or improve quality, new chemical and physical thawing aids are being developed alongside emerging techniques such as microwave-assisted, ohmic-assisted, high pressure, acoustic thawing, and so on. In addition to discussing the possible uses of these technologies for the thawing process and their effects on food quality, the purpose of this study is to present a thorough comparative overview of recent advancements in thawing techniques.

- MakaleAçık Erişim2025Scopus SJRQ1Effects of Augmented Reality and Video-Based Learning in Inquiry-Based Science Education on Academic Achievement and Motivation to Learn Science
Arici, Faruk; Yilmaz, Rabia Meryem
Background: Inquiry-based learning (IbL) has significantly contributed to science education, and this impact can be enhanced with technology. Augmented Reality (AR) offers 3D visualisation and interactive experiences, whereas Video-based Learning (VbL) provides narratives with visual and audio support. Both methods aid students in exploring, understanding and boosting their motivation to learn science (MtLS). Objectives: This study examines the effect of AR and VbL within an IbL environment on students' MtLS and academic achievement. Methods: A mixed-method research design was used, with a quasi-experimental approach for the quantitative aspect and a multiple case study for the qualitative part. Participants included two experimental groups and a control group. Experiment 1 (25 participants) received AR and IbL, Experiment 2 (26 participants) received VbL and IbL and the control group (25 participants) received only IbL instruction. Data were collected using academic achievement tests, MtLS scales and semi-structured interviews. Quantitative data were analysed via ANCOVA using SPSS, whereas qualitative data underwent content analysis. Results and Conclusions: Results indicated that AR technology in the IbL environment was more effective than VbL in enhancing academic achievement and MtLS. The VbL group also performed better than the IbL-only group. With regard to the MtLS subfactors, no significant differences were observed between the groups in terms of motivation for participation. However, Experiment-1 demonstrated significant improvement in motivation for conducting research and motivation for collaboration, compared to Experiment-2 and the control group. Experiment 2 showed significant results compared to the control group. Experiment-1 demonstrated significant improvement in motivation for performance and motivation for communication compared to the control group. Although Experiment-1 yielded higher results than Experiment-2, this difference was not significant. Experiment 2 and the control group demonstrate notable parallels. The findings of this study indicate that AR effectively supports academic achievement and MtLS in an IbL environment. Consequently, the utilisation of AR is advocated for middle school students engaged in the study of vertebrates.

- MakaleAçık Erişim2025Scopus SJRQ2High-Performance Microwave-Absorbing Hemp Textile: Ni-Zn Ferrite and Multiwalled Carbon Nanotubes-Infused Nanocomposite for X-Band Electromagnetic Interference Shielding
Teber, Pembe; Teber, Ahmet; Karakaş, İbrahim Hakkı
This study aims to develop a flexible and sustainable electromagnetic (EM) wave-absorbing material by using hemp fabric as a substrate incorporated with multiwalled carbon nanotubes (MWCNTs) and magnetic Ni-Zn ferrite nanoparticles (NPs). In this context, the objective is to achieve effective EM attenuation across a wide frequency range using a green, lightweight composite to meet the rising demand for ecofriendly shielding in electronic and communication systems. Ni0.5Zn0.5Fe2O4 and MWCNT composite NPs are uniformly dispersed in a molten paraffin binder and impregnated into hemp fabrics. The magnetic NPs are synthesized via the microwave-assisted combustion method. The EM parameters of the resulting structure are determined in the X-band using experimental scattering data and the Nicholson–Ross–Weir method. Absorption performance is evaluated based on varying weight ratios of magnetic NPs and MWCNTs, with an emphasis on impedance matching. The results indicate that combining dielectric and magnetic components significantly enhances absorption. A maximum reflection loss of −72.42 dB and a 3.81 GHz bandwidth (covering over 90.71% of the X-band) are achieved at 10.08 GHz. Increasing Ni-Zn content shifts the resonance to higher frequencies. This sustainable, flexible composite shows strong potential for electromagnetic interference shielding, particularly in defense applications requiring radar invisibility.

- MakaleAçık Erişim2025Scopus SJRQ1Design, Simulation, and Fabrication of High-Performance Metamaterial Absorber for EMI Mitigation and THz NDT/Imaging Applications: A Shape-Preserved GHz-to-THz Transition Approach
Teber, Ahmet
A metamaterial absorber (MMA) designed for the 5G FR2/mmWave bands (24.25–24.45 and 24.75–25.25 GHz) is simulated with CST Studio Suite and fabricated using laser and wet etching techniques. Absorption measurements are performed using horn antennas in conjunction with a vector network analyzer (VNA). The absorber achieves >95.8% absorption under normal incidence for Mode-1, while it exceeds 90% for Mode-2 in the 24.75–25.20 GHz. The simulation results are validated through an electrical equivalent circuit model and experimental data. This absorber presents a promising solution for electromagnetic interference (EMI) reduction and shielding applications. The same structure, scaled from mm to µm without shape alteration, achieved over 90% absorption in the terahertz (THz) region (24–26 THz), particularly in the 24–25.12 THz range. The THz region, known as the “THz gap”, presents challenges due to limited THz sources and detectors. However, technologies such as THz non-destructive testing (NDT) offer potential in biomedical, communication, and defense applications. From this perspective, the high performance and scalability to µm dimensions without changing the shape of the absorber make it suitable for high-frequency EM shielding applications. This dual behavior in the GHz and THz regions offers a versatile advantage due to its varied functionality.

- MakaleAçık Erişim2025Scopus SJRQ1Dietary Carvacrol Attenuates Cyclophosphamide-Induced Neurotoxicity: Implications for Food-Derived Neuroprotection and Molecular Mechanisms
Kızıl, Hamit Emre
Carvacrol (CRV) is a phenolic monoterpene abundant in culinary herbs such as oregano and thyme and is well known for its potent antioxidant, anti-inflammatory, and neuroprotective properties. This study investigated the ability of CRV to counteract neurotoxicity induced by cyclophosphamide (CP), a widely used antineoplastic agent. Male Wistar albino rats were divided into five groups and received CP and/or CRV treatments. Neurotoxicity and neuroprotection were evaluated through biochemical assays, real-time PCR, histopathological and immunohistochemical analyses, and behavioral testing (Morris Water Maze). CP administration led to significant increases in oxidative stress markers, disruption of antioxidant enzyme activities, upregulation of inflammatory mediators (NF-κB, TNF-α, iNOS), dysregulation of apoptotic regulators (increased Bax and Casp-3, decreased Bcl-2), alterations in autophagy markers (Beclin-1, LC3A, LC3B), and suppression of Notch1/Hes1 signaling. Histopathological analyses revealed neuronal degeneration, vascular hyperemia, and increased GFAP and 8-OHdG expression in brain tissue. CRV treatment, particularly at higher doses, effectively mitigated these biochemical, molecular, and histological alterations. Notably, CRV administration preserved spatial learning and memory function in CP-treated rats, as demonstrated by the Morris Water Maze test, indicating functional neuroprotection. These findings highlight the multifaceted neuroprotective mechanisms of CRV and suggest its potential as a food-derived bioactive compound for development into functional foods or dietary supplements to improve the quality of life for cancer patients undergoing chemotherapy.

- MakaleAçık Erişim2025Scopus SJRQ2Extraction of Phenolic Compounds From Lavender (Lavandula angustifolia L.) Plant by Natural Deep Eutectic Solvent and Greenness Assessment of Analytical Method With Modified Green Analytical Procedure Index
Ecem Bayram, Nesrin; Yenigün, Baran; Gerçek, Yusuf Can
In recent years, it has been important in terms of green technology and sustainability to promote the use of natural deep eutectic solvents (NADESs), especially those based on natural products, for the extraction of bioactive components with different functional properties from foods. Therefore, in this study, the effects of green extraction technology (ultrasonic-assisted extraction) and green solvents (NADESs) on the recovery of bioactive components from lavender (Lavandula angustifolia L.) were investigated and evaluated. In addition, the degree of greenness of the analytical method used during the study was determined using the modified green analytical procedure index (MoGAPI). In this context, the total phenolic content (TPC), total antioxidant capacity, and individual polyphenolic profiles of lavender extracts prepared with two different NADES were investigated by liquid chromatography-tandem mass spectrophotometer. Based on the results obtained, it was determined that NADES formed with choline chloride:formic acid (ChCl:FA) had a higher potential to extract bioactive components from lavender than NADES formed with ChCl:ethylene glycol (ChCl:EG). The TPC, antioxidant capacity, and total individual polyphenolic compound content of lavender extracted with these NADES were determined as 9.76 mg gallic acid equivalent/g, 20.83–104.39 mg Trolox equivalent/g, and 200.835 mg/kg, respectively. However, the degree of greenness determined by the MoGAPI tool of the analytical method used in this study was 78% and classified as ‘excellent green’. As a result, it can be concluded that NADES formed with ChCl:FA can be an alternative to conventional solvents for the extraction of bioactive components from lavender, as it provides a remarkable recovery of bioactive substances.

The increasing inadequacy of antibiotics against multidrug-resistant pathogens is a growing concern. In this study, the antibacterial activity of propolis extracts with different phenolic profiles against carbapenem-resistant clinical isolates was investigated. The antimicrobial activity of propolis extract was tested against Acinetobacter baumannii (K17, K16, and K21), Klebsiella pneumoniae (K22, and K19), and Stenotrophomonas maltophilia (E5, E7, and E4) bacterial strains isolated from tracheal aspirate and blood cultures. The total phenolic content and phenolic composition of the extracts were analyzed. Antimicrobial activity values examined according to the disk diffusion method were measured as minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC). The results showed that all propolis extracts showed different inhibition values against bacterial strains. As a result, the high inhibitory potential of the propolis extracts against resistant bacteria such as A. baumannii, K. pneumoniae, and S. maltophilia is promising for combating infections. However, the study needs to be supported by further randomized clinical studies.

- MakaleYalnız künye2024Scopus SJRQ2Effect of sesame protein/PVA nanofibers on oil separation and rheological properties in sesame paste
Yuzer, Mustafa Onur; Genccelep, Huseyin
This study aimed to prevent or minimize the oil phase separation that occurs during storage (0-90 days) of sesame paste at room temperature. In order to determine the changes during storage in the sesame paste samples, the zeta potential, rheological properties, and the separated oil ratio were determined. Significant (p < 0.01) effects of applied storage time and additives on the amount of oil separated in sesame pastes were determined. The oil separated in sesame paste samples varied between 3.83% and 16.29%. While the rate of separated oil increased three times in the control group over time, it showed an insignificant (p > 0.05) increase especially in the samples where 2% nanofiber was added. It was determined that the separation of the oil phase from the structure could be prevented up to 24.73% with the addition of SPI and up to 63.02% with addition of SPINL (nanofiber containing protein isolate) compared to the control. Practical applications: During storage, the particles in the sesame paste tend to precipitate, causing oil separation and residue cake, thus negatively affecting the acceptability of consumers. Additives were added in order to prevent or minimize oil phase separation, which occurs in sesame paste stored at room temperature and is not desired by consumers. As additives, nanofibers containing sesame proteins produced by the electrospinning method and sesame protein isolates (SPIs) were added. Added additives acted by preventing the separation of the oil phase from the structure. It has been determined that the addition of SPI to sesame pastes does not completely prevent the problem of oil separation in sesame paste, but is effective in delaying and reducing it. Since the oil decomposition can be reduced, the amount of oil separated and therefore the part that can sink to the bottom will decrease, so sesame paste will be consumed more appropriately and will contribute to the country's economy.

Kutlu, Naciye; Kamiloğlu, Aybike; Abca, Tuğba Elbir; Yilmaz, Özlem
Abstract: This study aimed to investigate the ultrasound-assisted extraction of bioactive compounds from persimmon (Diospyros kaki) calyx by deep eutectic solvents (DES) with different molar ratios. For this reason, the prepared DES extracts’ total phenolic–flavonoid compounds and antioxidant activities (1,1-diphenyl-2-picrilhydrazyl radical scavenging activity [DPPH•], Cupric Reducing Antioxidant Capacity (CUPRAC), and ferric reducing antioxidant power [FRAP]) were investigated as a result of the experimental design and optimization study conducted for this purpose. A sonication time of 20 min was determined as the optimal condition. Under these conditions, a molar ratio of 1.9:1 (lactic acid:choline chloride) and a water ratio of 70% provided the highest phenolic/flavonoid compounds and antioxidative activity. Correlations among water ratio, molar ratio, and sonication time were determined using principal component analysis (PCA). In conditions where total flavonoid compound, FRAP, and DPPH• are high due to PCA, it can be concluded that the sonication time is at high level; on the contrary, the water and molar ratios are at low level. In conclusion, ultrasound-assisted extraction using DES proved effective in persimmon calyx. Therefore, it can be recommended to use these environmentally friendly green solvents as an alternative to organic solvents in preparing extracts in various fields. Practical Application: This study shows the effectiveness of the ultrasound-assisted green extraction method using persimmon calyx specified as waste. These findings are compelling in the food industry in terms of consumers being now aware of green technology and the discovery that calyx is a good source of bioactive compounds.

- MakaleAçık Erişim2024Scopus SJRQ3Multifunctional electroless nickel boron composite coatings incorporated by magnesium diboride ceramic particles
Bülbül, Ferhat; Kara, Adem
In this study, the role of MgB2 in composite coatings is pivotal. Electroless Ni–B plating, a current-free chemical reduction process, deposits nickel–boron coatings. Other than MgB2, reinforcements like SiC, B4C, and so forth are used with Ni–B coatings for improved properties. The research focuses on Ni–B/MgB2 coatings on AISI 4140 steel using electroless deposition and annealing at different temperatures. Initially, the coating appears dense and amorphous, transforming into worm-like structures through crystallization with MgB2. Higher annealing temperatures lead to brush-like, feathery, and oyster mushroom structures, forming crystalline nickel boron compounds and oxide phases due to synergy. Interestingly, the newly introduced phases disrupt friction patterns nonlinearly, which is linked to MgB2’s ceramic nature and reinforcement quantity. Conversely, incorporating MgB2 and annealing-induced intermetallic phases notably enhances hardness (up to 6) and improves hydrophilicity and antibacterial traits in the coating.

Bülbül, Ali Savaş; Şahin, Engin
Chiral heterocyclic alcohols are important precursors for production of pharmaceutical medicines and natural products. (S)-1-(furan-2-yl)propan-1-ol ((S)-2) can be used production of pyranone, which can be used in the synthesis of sugar analogues, antibiotics, tirantamycines, and anticancer drugs. The synthetic approaches for (S)-2, however, have substantial difficulties in terms of inadequate enantiomeric excess (ee) and gram scale synthesis. Moreover, the biocatalytic synthesis of (S)-2 is unknown until now. In this study, the synthesis of (S)-2 was carried out by performing the asymmetric bioreduction of 1-(furan-2-yl)propan-1-one (1) using the Lactobacillus paracasei BD101 biocatalyst obtained from boza, a grain-based fermented beverage. (S)-2 was obtained with >99% conversion, >99% ee, and 96% yield under the optimized conditions. Furthermore, in 50 h, 8.37 g of 1 was entirely transformed into (S)-2 on gram scale (96% isolated yield, 8.11 g). This is the first report on the high-gram scale biocatalyzed synthesis of enantiopure (S)-2. These data suggest that L. paracasei BD101 can be used to bioreduction of 1 in gram scale and efficiently produce (S)-2. Furthermore, these findings laid the base for future study into the biocatalytic production of (S)-2. It was particularly notable as it was the highest known to date optical purity of (S)-2 generated by asymmetric reduction using a biocatalyst. This work offers a productive environmentally friendly method for producing (S)-2 using biocatalysts.

Baluken, Pınar; Kamiloglu, Aybike; Kutlu, Naciye
In this study, ultrasonication extraction of some bioactive compounds from green coffee beans was optimized with the response surface method using Box-Behnken experimental design. The best condition was selected as 90.90 W ultrasonic power, 33.63 min sonication time and 30 % solid concentration. The responses obtained under optimum conditions had TPC, DPPH and CUPRAC values identified as 6603.33±2025.94 ppm GAE, 9638.31±372.17 ppm TE and 98.83 mmol, respectively. Microwave-assisted selenium nanoparticle production was carried out using the extract obtained under optimized conditions. The produced selenium nanoparticles showed absorbance between 350–400 nm. The surface morphology and size of the nanoparticles were determined by transmission electron microscopy (TEM) and spherical nanoparticles of about 100 nm were produced. Functional groups affecting the reduction were determined by FTIR analysis. In addition, the produced selenium nanoparticles had amorphous (non-uniform) structure and could maintain their stability at high temperatures.
