- MakaleAçık Erişim2026Scopus SJRQ1Microwave-Assisted Extraction of Pectin from Pickled Cabbage Waste: Process Optimisation, Characterisation and Application in Low-Sugar Jam
Cebeci Aydın, Fatma; Erten, Tayyibe
This study optimised pectin extraction from pickled cabbage waste using microwave-assisted extraction (MAE), characterised the extracted pectin, and explored its potential for low-sugar jam production. The Box–Behnken design concluded that the optimal conditions are 539 W (microwave power), 116 s (time), and pH 1.5, yielding a pectin yield of 22.53 ± 2.63%. The physicochemical analysis revealed that the microwave-extracted pectin (MEP) was low methoxyl and had a high molecular weight (1.20 ± 0.004 MDa). It was composed of galacturonic acid, arabinose, rhamnose, xylose and glucose. FTIR, 1H NMR and SEM results also confirmed structural characteristics of MEP. MEP was confirmed to have remarkable technological properties, including an emulsion activity of 53.43 ± 2.19% and good stability over 30 days at 4 °C and 24 °C. Moreover, it has an oil-holding capacity of 1.18 ± 0.51 g oil/g pectin and an elevated water-holding capacity (9.36 ± 3.25 g water/g pectin). The application of MEP as a stabiliser in low-sugar jam enhanced viscoelastic characteristics of jam, like apple pectin, and G′ > G″ confirmed the improved shelf-life stability at 25 °C. This study emphasised that microwave-assisted extraction can be a sustainable, time- and energy-saving method for the valorisation of pickled cabbage waste, and highlighted the effect of MEP on the characteristics of low-sugar jam.

Deep eutectic solvents (DESs) have been widely used in food processing in recent years, owing to their remarkable advantages. The aim of this study was to evaluate the potential of DESs for the recovery of bioactive components from chokeberry fruit. First, among the 10 different DESs, the DES that extracted the highest total individual phenolic content (TIPC) from chokeberry was determined. Then, ultrasonically assisted extraction conditions (ultrasonic amplitude, time, and temperature) were optimized by response surface methodology to obtain the maximum amount of TIPC using this DES. According to the results obtained, the natural deep eutectic solvent (NaDES) choline chloride: acetic acid (1:2, 30% water content) provided the highest yield for TIPC extraction and the optimum conditions for maximum TIPC extraction were determined as 100% for ultrasonic amplitude, 50 °C for temperature and 60 min for sonication time. The TIPC content of the extracts prepared with this NaDES was determined between 1740.26 and 3703.14 mg/kg. In addition, the individual organic acid and individual anthocyanin contents of the NaDES extracts, as well as their antioxidant and antimicrobial activities, were determined. Chlorogenic acid (1392.351–2361.48 mg/kg) among phenolic compounds, pyruvic acid (9361.35–47398.04 mg/kg) among organic acids and kuromanin chloride (69748.13–134668.24 mg/kg) among anthocyanins were the dominant compounds in NaDES extracts. However, the extracts showed varying levels of antimicrobial activity against Gram (+) bacteria, Gram (−) bacteria, and yeast-like fungi (Candida strains). Finally, the Blue Applicability Grade Index (BAGI) was used to evaluate the practicality/blueness potential of the chromatographic method used to determine the anthocyanin composition of the DES extracts. In conclusion, NaDES (choline chloride:acetic acid) can be an alternative solvent for the recovery of some individual phenolics, organic acids and anthocyanins under different extraction conditions. In addition, the use of NaDES in the recovery of various functional compounds needed in food, cosmetics, pharmaceuticals, etc., is important for the promotion of sustainability and green technology.

- MakaleYalnız künye2026Scopus SJRQ1Molecularly engineered bacterial biopolymer as multifunctional interfacial regulators for dendrite-free and stable aqueous zinc-ion batteries
Adhami, Sadaf; Bayram, Sinan; Coskun, Sahin; Sonmezoglu, Savas; Yuksel, Recep
Aqueous zinc-ion batteries (ZIBs) are promising candidates for next-generation energy storage owing to their intrinsic safety, low cost, and high theoretical capacity. However, their practical application remains hindered by dendrite formation and parasitic side reactions such as hydrogen evolution reaction (HER), anode corrosion, and passivation. Herein, we introduce a sustainable and scalable strategy based on a bacterial eumelanin biopolymer (S2–20), synthesized via the oxidative metabolism of Pseudomonas aeruginosa with indole derivatives, and directly deposited onto Zn foil via spin coating. The S2–20 biopolymer provides a conformal, ion-permeable interface that simultaneously guides uniform Zn nucleation, enhances electrolyte wettability, and suppresses parasitic side reactions. Symmetric cells demonstrate significantly increased Zn2+ transference number (0.908), and prolonged cycling stability exceeding 1200 h at 1.0 mA cm−2 and 200 h under harsh conditions up to 20 mA cm−2. Full cells with V2O5 cathodes further confirm remarkable specific capacity (374 mAh g−1 at 1.0 A g−1) and capacity retention, maintaining 150.5 mAh g−1 after 2200 cycles at 1.0 A g−1. This work presents the first demonstration of a bacterial eumelanin biopolymer as a multifunctional interfacial stabilizer for Zn metal, offering a truly green, cost-effective, and scalable pathway toward safe and sustainable aqueous ZIBs.

- MakaleAçık Erişim2026Scopus SJRQ1The role of the 2023 earthquakes in the competencies and critical thinking skills of teacher candidates in Türkiye
Görgülü, Deniz; Cömert, Melike; Demir, Mustafa; Şahin, Çiğdem
Background: The impact of natural disasters on the professional development of teacher candidates has, to date, primarily been investigated in relation to psychological well-being and trauma. Nevertheless, the association between these extreme events and teacher candidates’ personal and professional competencies, as well as their critical thinking skills, remains insufficiently addressed in the literature. In particular, for teacher candidates who directly experienced the 2023 earthquakes in Türkiye, there exists a distinct need for comprehensive research that integrates both quantitative and qualitative methodologies. Methods: This study employed a sequential explanatory mixed-methods design. In the quantitative phase, the Personal-Professional Competencies Perception Scale (PPCPS) and the Critical Thinking Standards Scale (CTSS) were administered to 304 teacher candidates at İnönü University who directly experienced the 2023 earthquakes. In the qualitative phase, semi-structured interviews were conducted with 37 purposively selected participants to contextualize and deepen the quantitative findings. Results: A positive, significant, and strong correlation was found between critical thinking skills and personal and professional competency (r =.657, p <.01). Qualitative findings revealed that in the post-earthquake period, teacher candidates developed positive perceptions of critical thinking, particularly under the themes of developing different perspectives, empathy, and increased awareness; however, the inefficiency of distance education, communication problems, and psychological difficulties negatively affected their perceptions of professional competence. Conclusion: Research findings indicate that the earthquakes had a bidirectional impact on teacher candidates' perceptions of competence and critical thinking. Among these İnönü University teacher candidates, traumatic experiences appeared to enhance cognitive and critical awareness consistent with Post-Traumatic Growth (PTG) theory, while simultaneously weakening teacher candidates’ perceptions of professional competence, owing to distance learning disruptions and psychological challenges. These findings highlight that post-disaster teacher education processes should focus not only on academic sustainability but also on structural arrangements that support critical thinking, psychological resilience, and professional competencies.

Genç, Halil İbrahim; Hepsert, Sezgin; Öktem, Tuncay; Kiratli, Tuncay; Yildirim, Yavuz; İlgin, Özgecan
This study aimed to examine the relationship between orthorexia nervosa and body image, physical activity level, and the Big Five personality traits among non-clinical adult individuals. Based on the relational survey model, the research sample consisted of 350 undergraduate students (205 females, 145 males) enrolled in various departments at a public university. A convenience sampling method was used, and participants’ ages ranged from 18 to 30 years (M = 20.64, SD = 2.07). Data were collected using a personal information form, the ORTO-15 Scale, the Big Five Personality Test (short version), the Body Appreciation Scale, and the International Physical Activity Questionnaire. Pearson correlation and regression analyses were conducted. The findings revealed that conscientiousness, openness to experience, and body image were significantly associated with orthorexic tendencies. As levels of conscientiousness and openness to experience increased, behaviors related to orthorexia nervosa also tended to increase. Similarly, individuals with higher body image satisfaction exhibited more pronounced orthorexic tendencies. These results suggest that individual differences may play a determining role not only in healthy lifestyle choices but also in the potential development of these choices into pathological behaviors.

Uslu, Emin; Yilmaz, Galip; Uyar, Mehmet
This study explores the innovative dual-purpose use of carbon fiber, functioning both as a structural and a heating element, expanding its potential in hybrid composites. A prototype composite was fabricated using the vacuum infusion process, featuring a single carbon fiber layer at the core for dual-purpose and two outer layers of glass fiber. Electrical heating tests revealed a stable relationship between voltage, resistance, power, and temperature, demonstrating efficient heat generation as the voltage increased. Thermal imaging confirmed uniform heat distribution with minor variations. Free vibration tests evaluated the composite's dynamic behavior under various electro-thermal conditions. Results showed that increasing temperature reduced the natural frequencies, particularly in the second vibration mode. Changes in Rayleigh damping coefficients at higher temperatures highlighted the composite's sensitivity to thermal inputs. These findings underline the potential of hybrid composites for advanced applications like turbine blades and aerospace components, where multifunctionality, self-heating, and vibration control are critical.

The growing demand for environmentally friendly and cost-effective approaches has accelerated the development of sustainable methods for the synthesis of reduced graphene oxide (rGO). In this study, urea was utilized as a green reducing agent for rGO synthesis, offering an alternative to conventional toxic chemicals. The synthesized rGO was comprehensively characterized using FTIR, SEM-EDS, Raman spectroscopy, XRD, BET analysis, zeta potential, and conductivity measurements. These analyses revealed key functional, structural, and morphological properties, including surface functional groups, elemental composition, carbon-to-oxygen (C/O) ratio, particle size (PS), crystallite size (CS), specific surface area (SSA), zeta potential (ZP), thermal conductivity (TC), and electrical conductivity (EC). Process optimization was performed using the Taguchi L4(23) orthogonal array design across nine quality parameters. Under optimal conditions, notable enhancements were achieved: C/O ratio increased by 108%, ID/IG ratio by 164%, I2D/IG ratio by 26%, CS by 75%, and SSA by 134%, while PS was reduced by 37%. Furthermore, ZP and TC increased by 58% and 33%, respectively, whereas EC was reduced by 97%. These findings demonstrate the potential of urea as a sustainable and effective reducing agent in the production of high-performance rGO materials.

- MakaleAçık Erişim2025Scopus SJRQ1An examination of performance enhancement attitudes and belief levels regarding sports supplements among students receiving education on ergogenic aids and anti-doping practices
Karakaya, Umut Can; Ceyhan, Mehmet Ali
Background: This study examines the changes in performance enhancement attitudes and sports supplement belief levels among sports sciences faculty students after education on ergogenic aids and anti-doping practices. In the highly competitive environment of modern sports, nutrition and ergogenic aids are crucial in enhancing athletic performance and preventing injuries. However, research in this area is limited, and existing literature emphasizes the need to explore the relationship between education and these topics. Methods: The study employed an experimental design using a one-group pre-test and post-test method. The research group comprised 61 students (24 female and 37 male) from the Faculty of Sport Sciences at Bayburt University. Data collection tools included the “Personal Information Form,” the “Performance Enhancement Attitude Scale (PEAS),” and the “Sports Supplement Belief Scale (SSBS).” Data were collected via Google Forms and analyzed using SPSS 26.0 software. The skewness and kurtosis values were calculated to assess the data distribution, and parametric tests, including t-tests and ANOVA, were applied. Results: The findings revealed that education on ergogenic aids and anti-doping practices significantly improved students’ performance-enhancement attitudes. For example, PEAS scores increased from a pre-test mean of 38.74 to a post-test mean of 44.13 (p < 0.05), representing a change of approximately 13.91%. However, no significant changes were observed in SSBS scores. This suggests that students’ beliefs regarding sports supplements may be shaped by prior knowledge and experiences, making them less influenced by the educational intervention. Conclusions: This study demonstrates that education on ergogenic aids and anti-doping practices can positively influence students’ performance-enhancement attitudes. However, more in-depth educational programs may be required to impact beliefs about sports supplements. These findings can guide the development of more effective educational programs to enhance athletic performance and safeguard athlete health. By providing evidence-based insights, this study significantly contributes to the existing literature and supports the development of policies and educational initiatives in anti-doping and athlete education.

- MakaleAçık Erişim2026Scopus SJRQ3Effects of Different Adhesive Ratios on Selected Panel Properties of High-Density Fiberboard (HDF) Produced from Fir and Beech Chips
Çamlıbel, Osman; Ayata, Ümit
High-density fiberboard (HDF) has been utilized in various forest-based industries for centuries. This study investigated the effects of different adhesive ratios on the properties of HDF through a series of tests. The panels, designed in particular for this study, had been produced in a laboratory putting the usage of a combination of 70% fir (Abies nordmanniana subsp. bornmulleriana) and 30% beech (Fagus orientalis L.) fibers sourced from the western Black Sea area of Turkey. Two adhesive levels were tested: 10.73% for panel I and 11.30% for panel II, both calculated based on dry fiber weight. We assessed several physical and mechanical properties, including density, modulus of rupture (MOR), modulus of elasticity (MOE), internal bonding (IB), hardness, water absorption, and through-thickness swell, in accordance with standard testing methods. The results indicated that both adhesive levels produced panels meeting the general performance requirements for HDF. Panel II, which contained slightly more adhesive, demonstrated marginally better performance in specific strength and dimensional stability tests. Overall, the findings suggest that optimizing adhesive usage in industrial HDF production can help establish a balance between the performance requirements of the boards and cost-effectiveness in production.
- MakaleAçık Erişim2025Scopus SJRQ2Lyapunov-based adaptive state-space controller for liquid level control of a coupled tank system with unknown model
Lotfieghlim, Armin; Sekban, Hayriye Tuğba; Başçi, Abdullah
In this paper, a Lyapunov-based adaptive state space controller is designed to realize liquid level control in a coupled tank system. The proposed controller is a kind of adaptive control system that combines the principles of state space representation with Lyapunov stability theory to estimate unknown parameters and control a dynamic system. This approach ensures that the system remains stable even when the exact model parameters are unknown or change over time. Moreover, in order to test the performance of the proposed controller, proportional integral (PI) + feedforward (FF) controller is also applied to the same system under the same conditions and the results are compared. The results show that the proposed controller outperforms the PI + FF controller in terms of system response parameters such as rise time, percent overshoot, and settling time. On the other hand, when the error performance metrics integral squared error (ISE), integral time-weighted squared error (ITSE), integral time-weighted absolute error (ITAE), and integral absolute error (IAE) are evaluated, it is seen that the same situation is also realized here, and the proposed controller follows the reference signals with lower error values in real-time studies for different reference signals.

Yilmaz, Y.; Mollamahmutoglu, M.
The liquefaction susceptibility of various graded fine to medium saturated sands are evaluated by stress controlled cyclic triaxial laboratory tests. Cyclic triaxial tests are performed on reconstituted specimens having global relative density of 60%. In all cyclic triaxial tests, loading pattern is selected as a sinusoidal wave form with 1.0 Hz frequency and effective consolidation pressure is chosen as 100 kPa. Liquefaction resistance is defined as the required cyclic stress ratio causing initial liquefaction in 10 cycles during the cyclic triaxial test. The results are used to draw conclusions on the effect of the extreme void ratios and void ratio range on the liquefaction resistance of various graded sands.

- MakaleAçık Erişim2010Scopus SJRQ2Pre- and post-cyclic loading strength of silica-grouted sand
Mollamahmutoglu, M.; Yilmaz, Y.
The aim of this study is to investigate whether there is a loss in the strength of fine- to medium-grained colloidalsilica-grouted sand after cyclic loading. First, the rheological properties of colloidal silica grouts, such as gel time and viscosity, are studied. Then, appropriate colloidal silica grouts (saline solution/colloidal silica suspension ratios of 10%, 15%, 20% and 25% by weight) are selected. The selected colloidal silica grouts are then injected into fine- to medium-grained sand specimens prepared at an overall relative density of 50%. The strength of the grouted sand specimens is determined by unconfined compression tests. The effect of curing period on the strength of the grouted samples is also investigated. After performing cyclic loading tests on grouted sand specimens at different cyclic stress ratios (0, 0.13, 0.26 0.39 and 0.52), it is observed that none of the samples failed or was damaged, and that the colloidal silica grout provides fine- to medium-grained sand with a significant resistance to cyclic deformation. The samples are then subjected to unconfined compression tests, and the results show that the loss in the strength of colloidal-silica-grouted sand is insignificant.
