Relationship between food insecurity, intuitive eating, and body mass index among adults: a cross-sectional study in Türkiye

    Ünal, G.; Esgin, Özge

This study examined the relationship between food insecurity, intuitive eating, and body mass index among adults. This cross-sectional study was conducted through face-to-face interviews between January and March 2025 at a public university in Türkiye, involving 1166 students and personnel (65.7 % women; age range: 19–64 years). Participants answered the Food Insecurity Experience Scale and the Intuitive Eating Scale-2, which has four subdimensions: unconditional permission to eat, eating for physical rather than emotional reasons, reliance on hunger and satiety cues, and body-food choice congruence. Self-reported body weight and height were collected to calculate body mass index. Food insecurity was experienced by 42.7 % of participants. It was associated with lower total Intuitive Eating Scale-2, reliance on hunger and satiety cues, body-food choice congruence (controlled for sex, institutional role, and age), and eating for physical rather than emotional reasons (controlled for sex and institutional role) scores. Sex was not a moderator of the association between food insecurity and intuitive eating. There were no significant interactions between Intuitive Eating Scale-2 total and subdimensions and food security status for body mass index. Overall, our study provides empirical evidence that food insecurity is a significant factor that contributes to low levels of intuitive eating in a large sample of Turkish adults. Further studies should investigate the moderating effect of sex on the association between food insecurity and intuitive eating, while also emphasizing the role of food insecurity in the relationship between intuitive eating habits and body mass index in different populations.

Evening chronotype and highly processed food consumption: The mediating role of intuitive eating

    Esgin, Özge; Ünal, G.

This study examined associations among chronotype, intuitive eating, and highly processed food (HPF) consumption and evaluated the mediating role of intuitive eating, with sex as a potential moderator. This cross-sectional study, conducted via an online survey in Türkiye from October 2025 to January 2026, included 610 adults. Participants completed the Morningness–Eveningness Questionnaire (MEQ), the Intuitive Eating Scale–2 (IES–2), and the Screening Questionnaire of HPF Consumption. The IES–2 comprises four dimensions: unconditional permission to eat (UPE), eating for physical rather than emotional reasons (EPR), reliance on hunger and satiety cues, and body-food choice congruence (B-FCC). Among participants, 20.3% had an evening chronotype, and 68% reported high HPF consumption. Eveningness was associated with higher UPE (β = 0.219, p = 0.002) and EPR (β = 0.148, p = 0.032) and lower B-FCC (β = −0.225, p = 0.002); however, a sex difference emerged only for EPR, with a weaker association in women (β = −0.155, p = 0.029). Lower MEQ scores were significantly associated with higher HPF consumption (β = −0.212, p < 0.001), with no significant sex differences. All analyses were adjusted for age and body mass index. Mediation analyses indicated that UPE (indirect effect: −0.013 for women; −0.022 for men) and B-FCC (−0.006 for women; −0.013 for men) had significant indirect effects linking chronotype to HPF consumption, with no moderating effect of sex. These findings suggest that intuitive eating mechanisms may partly explain the association between evening chronotype and higher HPF consumption.

Upcycling marble waste into construction materials and heavy metal adsorbents via hot-pressed geopolymerization technique

Öksüzer, Nurullah; Uslu, Emin; Gökçe, H. Süleyman

This study presents a sustainable approach to utilizing marble dust waste by producing bifunctional metakaolin-based geopolymers via a synchronized hot-pressing technique. In this study, the environmental footprint was minimized by designing mixtures in which marble waste constituted 50% of the total volume. Three stoichiometric series were investigated by varying the activator modulus (SiO2/Na2O = 3 and 4) and the Si/Al ratio (2 and 3) under two curing temperatures (150 and 300 °C) and three compaction stresses (5, 25, and 50 MPa). Thus, a high-volume industrial byproduct was transformed into a functional component. In this context, it investigated the transformation of industrial products into next-generation materials by using them to produce cementless composite geopolymers for civil engineering and to adsorb heavy metal (Cu2+). As a result of the research, an early compressive strength of 58 MPa was obtained through heat treatment and pressing applied at 300 °C and 50 MPa. This optimum strength was achieved in the SiO2/Na2O = 3, Si/Al = 3 series, whereas excess silica (SiO2/Na2O = 4) and excess aluminum (Si/Al = 2) limited the strength to 16.8 and 35.2 MPa, respectively. Microstructural analyses (SEM/EDS and FT-IR) revealed that marble dust was used as a filler material in the microstructure to produce an N-A-S-H-containing matrix. The produced materials were then ground after their service life and used to purify water containing heavy metals. More than 99.75% of Cu2+ was removed through ion exchange between copper ions used as heavy metals. The residual Cu2+ concentration fell below 0.25 mg/L from an initial concentration of 100 mg/L, and the released Na+-to-adsorbed Cu2+ molar ratio of approximately 1.8–2.3 confirmed an ion-exchange-dominated uptake mechanism. This structural and environmental impact demonstrates that marble waste, which is otherwise discarded as waste, is considered inert, offering an alternative model for the circular economy and environmental applications.

Removal kinetics of vinyl acetate under aerobic and anoxic conditions in a batch bioreactor

Yalçın Çelik, Beste; Nuhoğlu, Alper; Kul, Sinan; İrdemez, Şahset

Vinyl acetate is a volatile organic compound widely used in the chemical industry, and there is a need for effective and economic removal of this volatile organic compound from wastewater and waste gases in chemical industries. This study aims to determine the biological treatability of vinyl acetate both under aerobic and anoxic conditions using mixed cultures obtained from a wastewater treatment plant. Considering the previous studies in the literature, testing the biodegradability of vinyl acetate under both aerobic and anoxic conditions, together with evaluating the effect of other mechanisms, such as adsorption and volatilization, on the removal of vinyl acetate, can be regarded as the prominent part of this study. Wastewater containing artificially prepared vinyl acetate was treated in a batch bioreactor, and performance and kinetic constants were investigated. Aerobic treatment under batch conditions conformed to the Haldane biokinetic equation, and the biokinetic constants of μmax, Ks, and Ki were calculated as 0.66 h−1, 19.67 mg L−1 and 50.56 mg L−1, respectively. Anoxic treatment under batch conditions conformed to the Monod biokinetic equation, and the biokinetic constants of μmax and Ks were calculated as 0.31 h−1 and 33.88 mg L−1, respectively. Experiments revealed that vinyl acetate was not volatile, and its adsorption and biological treatment performances were 28% and 72%, respectively. The mixed culture had a very high performance for removing vinyl acetate under batch operating conditions. The primary mechanism of vinyl acetate removal was found to be biological treatment.

Genetic algorithm enabled virtual multicast tree embedding in Software-Defined Networks

Guler, Evrim; Karakus, Murat; Ayaz, Furkan

The recent network virtualization technology enables the multi-tenancy, where various virtual network requests can share the same physical network by decoupling network services from the underlying hardware architecture. The process of virtual node and link mapping onto a shared Substrate Network (SN) by satisfying the requested network resources (i.e., bandwidth, computing capacity, etc.) is referred to as Virtual Network Embedding (VNE), which is known as an NP-Hard problem. The problem of VNE aims to exhibit one-to-one (unicast) communication. However, the motivation of this research is to explore how to efficiently map virtual networks with one-to-many (multicast) communications, which are in the form of Virtual Multicast Trees (VMTs), onto an SN. This problem differs from the traditional VNE problem and has not been well-studied by the research community. To this end, we propose a novel algorithm, Modified Genetic Algorithm for Virtual Multicast Tree Embedding (MGA-VMTE), to embed VMTs onto a shared SN in this research. The proposed MGA-VMTE algorithm focuses on minimizing the network resource consumption (i.e., bandwidth) under end-to-end delay constraint in the SN while satisfying the computing request of virtual nodes. Our extensive simulations demonstrate that the MGA-VMTE algorithm outperforms the dynamic impact factor and traditional greedy-based virtual multicast tree embedding approaches regarding bandwidth consumption, acceptance ratio, and resource depletion ratio metrics on NSFNET, USNET, Random-60 node, and Random-120 node network topologies.

Development of buffalo milk ice-cream by high pressure-homogenisation of mix: Physicochemical, textural and microstructural characterisation

Sert, Durmuş; Mercan, Emin; Kılınç, Mehmet

This study aimed to determine the physicochemical, textural, and microstructural characteristics of buffalo milk ice cream produced from high-pressure homogenisation (HPH) treated ice cream mix. Ice cream mix was subjected to 0 (control), 30, 60, 90, 120, or 150 MPa. HPH increased the firmness and consistency value of mixes, whereas it decreased cohesiveness and index of viscosity values. Also, HPH improved the lightness, redness, and yellowness of the mix. The mean particle size of HPH-treated mix samples was lower than the control, except HPH-150. The hardness of ice cream samples was between 14.30 and 77.81 N, in which HPH increased hardness value with the increasing pressure. The overrun of ice cream samples ranged from 19.93 to 45.15%, and HPH decreased it. HPH significantly improved resistance to melting in the ice cream. Scanning electron microscopy images revealed that HPH reduced the size of air bubbles. HPH at 150 MPa resulted in a foamy structure in the ice cream. HPH can alter the hardness, microstructure, and melting characteristics of buffalo milk ice cream. Products with improved properties may be developed by further modifying the formulation and processing parameters.

Orange, red and purple barberries: Effect of in-vitro digestion on antioxidants and ACE inhibitors

Şensu, Eda; Kasapoğlu, Kadriye Nur; Gültekin-Özgüven, Mine; Demircan, Evren; Arslaner, Ayla; Özçelik, Beraat

Bioactive compounds such as phenolics, anthocyanins and carotenoids were investigated in Berberis plant with purple (PB), red (RB) and orange (OB) fruits (barberries). The study was aimed to evaluate the bioaccessibility of the antioxidants and ACE (angiotensin converting enzyme) inhibitory compounds of barberry plants upon their transit through in-vitro digestion. Among barberries, (PB) exhibited the strongest antioxidant activity due to its higher phenolic and flavonoid content. The order of total phenolics and anthocyanins was PB > RB > OB. Chlorogenic acid was the main phenolic compound in all barberries even after in-vitro digestion. All barberries had similar amounts of total carotenoids (4.45 mgβ-carotene/100gDW). After in-vitro digestion, decreasing phenolics, anthocyanins and carotenoids led to a reduced antioxidant activity. Anthocyanins were found the most sensitive compounds in-vitro digestion. In terms of ACE inhibition activity, only RB exhibited ACE inhibition before (73.84%) and after (65.51%) in-vitro digestion. No ACE inhibition activity was detected at all in RB and OB samples. Leaves and branches of Berberis had also over 50% ACE inhibitory activity. To our knowledge, this is the first study on the carotenoids of barberry and the effect of in-vitro digestion on its bioactive compounds and ACE inhibitors.

Production of lactose derivative hetero-oligosaccharides from whey by glucansucrase E81 and determination of prebiotic functions

    İspirli, Hümeyra; Dertli, Enes

Bioactive oligosaccharides are important compounds for development of functional foods and ingredients. In this study, lactose derivative hetero-oligosaccharides were produced by acceptor reaction of glucansucrase E81 with whey. The synthesis of oligosaccharides was monitored by Thin Layer Chromatography (TLC) analysis followed by 1H and 13C Nuclear Magnetic Resonance (NMR) spectroscopy analysis which demonstrated the glycosylation of lactose with α-(1 → 2), α-(1 → 3) and α-(1 → 4) linkages. Liquid chromatography–mass spectrometry (LC-MS) analysis demonstrated the formation of DP 7 oligosaccharides from whey. The synthesized oligosaccharides were not digested under in vitro human gastric juice and α-amylase conditions. The prebiotic effect of lactose derivative hetero-oligosaccharides was tested and no growth in pathogenic strains was observed whereas certain probiotic strains utilised lactose derivative hetero-oligosaccharides as Carbon source and their growth was promoted. These findings can be important to reveal the potential of glucansucrases to produce functional oligosaccharides from different sources including waste materials.

A green nano-biosynthesis of selenium nanoparticles with Tarragon extract: Structural, thermal, and antimicrobial characterization

Yilmaz, Mustafa Tahsin; İspirli, Humeyra; Taylan, Osman; Dertli, Enes

In this study, tarragon extract was used as a reducing agent to perform green nano-biosynthesis of selenium nanoparticles (SeNPs). The synthesized SeNPs were characterized using measurements of UV–Vis spectroscopy, scanning electron microscopy (SEM), transmission electron microscopy (TEM), energy disperse analysis of X rays (EDAX), Fourier-transform infrared spectroscopy (FTIR), X-ray diffractometer (XRD) and differential scanning analysis (DSC). Synthesis of nanoparticles was confirmed by observing a peak at 212 nm in UV-VIS, indicating the surface plasmon resonance of SeNPs. Tarragon extract enabled a stable dispersion of SeNPs, giving rise to formation of the nanoparticles in the shape of quasi-spheres without clustering with the sizes between 20 and 50 nm. The SeNPs were shown to be in the form of nanocrystals, having Se embedded in the nanostructure with high thermal stability (a high resistance to thermal process over 200 °C). The SeNPs synthesized with tarragon extract could remarkably increase the inhibition zones from approximately 13 to 18 mm against the pathogenic bacteria and from 10 to 14 mm, 17–36 mm, 8–12 mm, 15–24.5 mm and 9–14 mm, against A. alternata, A. niger, A. parasiticus, B. cinerea, F. oxysporum and P. chrysogenum, respectively.

High-pressure homogenisation of sheep milk ice cream mix: Physicochemical and microbiological characterisation

    Sert, Durmuş; Mercan, Emin

The effect of high-pressure homogenisation (HPH) treatment (0, 25, 50, 75, or 100 MPa) of mix on the physicochemical, textural, and microbiological characteristics of sheep milk ice cream was determined. Textural properties of the mix were not affected by HPH. However, HPH increased L*, a*, and b* values of the mix. In HPH-treated mix samples, the mean particle diameter was lower compared with the control. The hardness value of ice cream changed from 43.0 to 58.1 N, and HPH increased it depending on the increasing pressure. The highest overrun (58.3%) was determined in control, whereas the lowest overrun (35.8) was found in HPH-100. Melting time and first dripping time were increased depending on the increasing pressure of HPH, while HPH decreased the melting rate. HPH treatment of mix significantly reduced the microbial loads of ice cream samples. Consequently, HPH treatment can enhance the hardness, melting, and microbiological properties of ice cream from sheep milk.

Effects of ozone treatment to milk and whey concentrates on degradation of antibiotics and aflatoxin and physicochemical and microbiological characteristics

    Sert, Durmuş; Mercan, Emin

The aim of this study was to investigate the effects of the ozone treatment (OT) to milk concentrate (MC) and whey concentrate (WC) on the physicochemical and textural properties, as well as, on the microbial, antibiotic, and aflatoxin content. For that purpose, OT was applied to MC and WC samples 0 (control), 5, 10, 15, 30, or 60 min. OT (60 min) achieved 18.9 and 9.9% degradation of aflatoxin M1 in MC and WC, respectively. OT caused degradation of β–lactam, and tetracycline in concentrates. Volume mean diameter of MC was increased by OT, those of WC was decreased. The firmness and consistency values of ozone-treated concentrates were lower than the control groups. OT decreased the cohesivity of MC. OT increased the lightness of samples, while it decreased yellowness. In MC and WC samples, OT was effective in reducing the microbial load. The degradation of antibiotics and aflatoxin, and reducing the microbial load of concentrates by OT are crucial for human health and the processing of dairy products.

Synthesis and characterization of Bifidogenic raffinose-derived oligosaccharides via acceptor reactions of glucansucrase E81

İspirli, Hümeyra; Bowman, Michael J.; Skory, Christopher D.; Dertli, Enes

Glucansucrases can perform acceptor reactions with different sugars to produce distinct oligosaccharides which can potentially act as prebiotics depending on their characteristics. Using cheap substrate sucrose and under mild and environmentally friendly conditions, glucansucrase-derived oligosaccharides can be produced with high yields. In this study, raffinose-derived oligosaccharides up to degree of polymerization (DP) 7 produced by glucansucrase E81 were characterized and their prebiotic functions were evaluated. The main product was a DP 4 oligosaccharide containing two products formed by the transfer of the glucose to raffinose at either the 3- (81%) or 4-O (19%) position of its galactose residue confirmed by NMR spectroscopy and LC-MS-LTQ analysis. The purified DP 4 raffinose-derived oligosaccharides were subjected to in vitro human gastric fluid and α-amylase digestion tests and no digestion was observed under both cases. Finally, prebiotic potential of DP 4 raffinose-derived oligosaccharides was tested with probiotic and pathogenic strains and only growth of Bifidobacteria promoted, thus supported the Bifidogenic activity of DP 4 raffinose-derived oligosaccharides.

The effects of Cephalaria syriaca flour on physical, rheological and textural properties of sunn pest (Eurygaster integriceps) damaged wheat dough and bread

    Başar, Şule; Karaoğlu, Mehmet Murat

The aim of this study was to investigate the effects of Cephalaria syriaca flour (CSF; 0.5, 1.0 and 1.5%) on the physical, textural and rheological characteristics of dough and bread obtained from sunn pest-damaged wheat (SPDW; 5, 10 and 15%). An increased CSF level significantly decreased the stickiness and volume loss values of dough and the firmness and chewiness values of bread for all SPDW levels. The dough stickiness and bread firmness values were considerably increased by the addition of SPDW at the 15% level (1.05 N and 29.76 N), whereas these values were reduced by the addition of 1.5% CSF (0.6439 N and 22.56 N). In general, the stress relaxation, gas retention and gluten extensibility parameters of dough; and the specific volume, colour, cohesiveness, springiness and resilience values of bread significantly increased depending on the increasing level of CSF. Especially, the 1.5% CSF level significantly improved the quality of the dough and breads. The results of the present study revealed that CSF addition to SPDW flour positively affected the stickiness, gas retention and stress relaxation of dough and the specific volume and instrumental textural properties of bread.

Probiotic properties of lactic acid bacteria strains isolated from pastırma

Topçu, Kübra Cinar; Kaya, Mükerrem; Kaban, Güzin

In this study, the probiotic properties of 80 lactic acid bacteria (LAB) strains isolated from pastırma, a dry-cured meat product, were investigated. For this purpose, strains were investigated for their resistance to bile salt and hydrophobicity abilities. In 6 strains selected as a result of these analyses, development at high salt concentrations, auto-aggregation and co-aggregation, resistance to low pH, and adhesion analyses were performed. The growth percentage of all strains decreased with increasing bile salt concentration at both 25 °C and 37 °C. P. pentosaceus K7, K41, K44, K51 and K81 and P. acidilactici K99 gave the highest values in terms of hydrophobicity ability. The highest auto-aggregation and the highest co-aggregation were found in P. pentosaceus K41 (17.62%) and P. pentosaceus K44 strain (26.23%), respectively. These six strains showed tolerance to high acidity even at pH 2. The strains significantly maintained their viability in the simulated gastric and intestinal fluids. Furthermore, the strains had low adhesion capacity in Caco-2 and HT-29 cell lines and generally showed resistance under gastrointestinal system conditions. As a result, P. pentosaceus K44, P. acidilactici K99 and P. pentosaceus K41 could be considered as probiotic strains.

Portable infrared sensing technology for phenotyping chemical traits in fresh market tomatoes

Akpolat, Hacer; Barineau, Mark; Jackson, Keith A.; Aykas, Didem P.; Rodriguez-Saona, Luis E.

Our objective was to develop predictive regression algorithms based on infrared spectroscopy to screen for selected quality traits directed at optimizing the selection capabilities of fresh market tomatoes. Fresh tomato (681) samples were harvested from multiple locations (Florida, Virginia, California and South Carolina) during the 2016 and 2018 seasons at various ripening stages. Spectra were collected by transmittance and attenuated total reflectance (ATR) either from the tomato surface or juice. Reference methods included soluble solid content, titratable acidity, sugars, organic acids, and lycopene. Partial least squares regression using surface spectra showed good correlation for lycopene and ascorbic acid (rcv>0.9) but modest correlation coefficients (rcv 0.54–0.80) for all other traits, while juice spectra gave high correlation coefficients (rcv>0.94) and excellent predictive performance (RPD range 3–10) for all quality traits except ascorbic acid (rcv>0.79). Multiple quality traits were simultaneously determined by using a single drop of sample providing fast (<1 min) measurements and minimal sample preparation based on unique spectral fingerprints.

Synthesis and characterisation of alternan-stabilised silver nanoparticles and determination of their antibacterial and antifungal activities against foodborne pathogens and fungi

Yilmaz, Mustafa Tahsin; İspirli, Hümeyra; Taylan, Osman; Dertli, Enes

In this study, alternan isolated from Lactobacillus reuteri E81 was used as the stabilising agent to produce alternan-stabilised silver nanoparticles (AgNPs-Alt) and AgNPs-Alt were characterized and their antibacterial and antifungal activities were tested. The formation and the stability of AgNPs-Alt were determined by UV–vis spectroscopy analysis. SEM and TEM analysis revealed the uniform morphology of AgNPs-Alt with an average size of ~50 nm. The crystalline nature of the AgNPs-Alt was confirmed by XRD analysis. The interactions of alternan functional groups with silver was observed by FTIR analysis and thermal characteristics of AgNPs-Alt were determined by DSC analysis. Finally, the antibacterial and the antifungal activities of AgNPs-Alt were tested and AgNPs-Alt revealed inhibitory effects to pathogenic strains at 0.25 mg ml−1 concentration and this activity was observed to be concentration dependent. For the antifungal activity, a higher level of AgNPs-Alt was required compared to the antibacterial activity.

The role of cobalt doping on the optical and structural properties of Mn 3 O 4 nanostructured thin films obtained by SILAR technique

Bayram, Ozkan; İgman, Erdal; Guney, Harun; Simsek, Onder

Cobalt doped manganese oxide thin films (Mn 3 O 4 :Co) were successfully deposited on soda lime glass substrates using SILAR technique. Mn 3 O 4 :Co thin films were characterized using XRD, SEM, Uv–VIS and Raman spectroscopy. The XRD spectra showed that thin films had substantially Hausmannite crystal structure. The preferential orientation of the pure and 0.5 at.% Co doped manganese oxide thin films (Mn 3 O 4 ) was (002), but with increasing Co doping, it was detected that this preferential orientation shift towards the (211) plane. The absorbance, transmittance and optical band gap of the Mn 3 O 4 :Co thin films were determined using Uv–Vis spectroscopy and these properties of the thin films differed considerably due to cobalt doping. The optical band gap of pure Mn 3 O 4 thin films was 2.00 eV, but on the other hand, due to the Co doping this value increased before and then decreased slightly. Optical transmittance of Mn 3 O 4 :Co films increased from 60% to 72% with the effect of Co doping. A1g mode, which is the characteristic vibration peak of Mn 3 O 4 films, was confirmed for pure and doped Mn 3 O 4 thin films at a wavelength of 658 nm.

Nisin and curcumin loaded (NCL) nanomats having 172 nm mean diameter were successfully fabricated. The effect of NCL nanomats in terms of limitation of Total Mesophilic Aerobic (TMAB) and Lactic acid bacteria (LAB) in fish fillets was tested during the analysis period. On the 4th day, while TMAB load of C was 6.61 log CFU g−1, that of the sample coated with NCL nanomats was found to be 3.28 log CFU g−1. TMAB load of control samples reached above 6 log CFU g−1 on the 4th day of cold storage, TMAB load of fish samples coated with nanomats reached the same level up to the 12th day. The shelf life of coated fillets was extended to 12 day. 3–4 logarithmic decrease was obtained in LAB count by NCL nanomats during the analysis period. On the 4th storage day, the hardness value of C sample decreased 21% compared to NCL samples. All sensory attributes of C samples were acceptable by the 4th day of the storage; while sensory attributes of NCL samples were acceptable by the 10th day of storage. The study revealed that nisin and curcumin loaded nanomats could be effectively used to improve the quality of fish fillets.

Piezoelectric and electromagnetic hybrid energy harvesting with low-frequency vibrations of an aerodynamic profile under the air effect

Bolat, Fevzi Cakmak; Basaran, S.; Sivrioglu, S.

In this study, a novel hybrid energy harvesting system consisting of a piezoelectric material and an electromagnetic induction device is experimentally inevstigated. Flow-induced vibrations can be considered as an aerodynamics air effect and can be converted to electrical energy. By connecting an airfoil profile to a beam element, vibrations are occurred on the proposed structure by creating an aerodynamic air effect. This aerodynamic air effect is controlled by using an Arduino board with a solenoid valve connected to the air line. A piezoelectric transduction is attached on the beam, and an electromagnetic-Lorentz induction is connected to the airfoil element at the end of this beam. Energy is simultaneously harvested by using electromagnetic induction and piezoelectric transduction with respect to the vibration motion of the beam. Within the scope of the study, the amount of energy obtained using the piezoelectric material and Lorentz actuator by connecting resistors of different sizes are measured with an oscilloscope. The experimental results show that the amount of energy obtained from the proposed structure is at promising levels that can be used to run small electronic units which commonly used in aerospace applications.

Impact of heat treatment and acid gelation on polyphenol enriched milk samples

    Bayraktar, M. Kilic; Harbourne, N.B.; Fagan, C.C.

The effects of heat treatment and the stage of polyphenol addition to milk before or after heat treatment on the total phenolic content (TPC), ferric-ion reducing antioxidant power (FRAP), pH, casein micelle size (CMS) and whey protein denaturation content of milk-polyphenol mixtures were investigated. Four sources of phenolic compounds (green tea, white grape, tannic acid, gallic acid) were incorporated into pasteurized-skim milk. A heat treatment (85 °C for 30 min) was applied to pasteurized-skim milk either before (MhP) or after polyphenols addition (MhPh). Acid milk gels were produced using MhPh samples, and their TPC and FRAP were determined. Heat treatment decreased the TPC and FRAP values of the samples, except for tannic acid, probably due to increased polyphenol-protein interactions. However, MhPh tannic acid sample resulted in significantly higher FRAP value than MhP. The addition of gallic acid before heat treatment (MhPh) significantly increased CMS due to the lower pH of this sample during heating. Acid gelation decreased the extractable polyphenols, however there was no significant different on FRAP between acid gel and MhPh milk samples. This study showed that the properties of phenolic source, particularly pH, and the stage of polyphenol addition to milk had an impact on selected properties.
