- MakaleAçık Erişim2026Scopus SJRQ2Nutrient composition of some edible wild plants with high nutritional value in Eastern Türkiye
Bakacak, Mustafa; Gul, Volkan
The demand for edible wild plants for their health and high nutritional content has increased dramatically worldwide. Although some wild plant species are eaten as vegetables, information on their nutritional content is limited. This study provides interesting, useful data (moisture, dry matter, ash, organic matter, protein, and mineral content) on the nutritional value of ten wild plant species traditionally consumed in the eastern Anatolia region of Türkiye. These species are Arum rupicola var. virescens, Allium vineale, Rumex crispus, Satureja hortensis, Scorzonera mollis subsp. szowitzii, Eremurus spectabilis, Urtica dioica, Gundelia glabra, Rheum ribes, and Ferula orientalis, According to the results obtained; dry matter ratio varied between 6.03–10.77%, organic matter ratio varied between 80.63–93.65%, protein ratio varied between 9.94–35.71%, P content varied between 112.38–806.54 mg/100 g, K content varied between 1597.46–7980.06 mg/100 g, Mg content varied between 214.64–704.84 mg/100 g, Ca content varied between 142.6.2–1157.53 mg/100 g and Fe content varied between 14.20–460.32 mg/100 g. Urtica dioica gave the best results in terms of protein, P, Mg, Ca, Na, and Cu, while Scorzonera mollis subsp. szowitzii gave the best results in terms of Mn and Cu. These new findings suggest that the obtained plants can be considered a valuable source of nutrients in human nutrition and will allow their inclusion in food nutrient databases.

Carotenoids, vitamins, and minerals have vital roles for living organisms, yet they often remain underutilized due to their poor solubility, limited stability, and low bioavailability. Thanks to electrospraying technology, innovative solutions are available to overcome these challenges compared to conventional delivery systems. Therefore, this book chapter provides comprehensive information on the principles, mechanisms, electrospraying techniques, effective parameters on particle formation and properties, regulatory aspects, and in vitro/in vivo particle delivery systems of electrosprayed carotenoids, vitamins, and minerals. The chapter is structured into five main sections. The first section gives a brief introduction to electrospraying technology and electrosprayed particles. In the second section, the focus shifts to the fundamentals of electrospray technology and detailing their underlying principles, types, and parameters. The third section delves into the specific uses of electrospraying for xbiotics, phenolic and nonphenolic compounds, with particular emphasis on the applications of electrospraying for the encapsulation of carotenoids and minerals, carotenoids, and taste-related compounds. This section also related to the impact of electrospraying on seafood quality as a good example. The fourth section provides an in-depth analysis of the stability, absorption, and bioavailability improvements of electrosprayed particle delivery systems through in vitro and in vivo studies. The final section addresses regulatory considerations, safety, and future perspectives. It reviews the current regulatory landscape for food additives and dietary supplements, emphasizing the compliance requirements for novel electrosprayed delivery systems. Through detailed scientific insights and practical applications, this chapter paves the way for innovative approaches to electrosprayed particles for improved delivery of carotenoids, vitamins, and minerals.
- MakaleYalnız künye2024A Comparative Study on the Bioactivity and Mineral Content of Different Grapevine (Vitis vinifera L.) Leaves Cultivated in Türkiye
Yildiz, Hilal; Cakir, Ozlem; Cakiroglu, Kubra; Karatas, Neva
The mineral composition, total phenolic content, radical scavenging, and antibacterial activity of 17 Vitis vinifera L. leaves obtained from vineyards in northeast Türkiye were investigated in this study. The antibacterial activities of grapevine leaf extracts were investigated by the disk diffusion method against five bacterial strains, and all leaf extracts showed inhibitory activity on both Bacillus cereus and Staphylococcus aureus. The radical scavenging activity of grapevine leaf extracts was evaluated using the DPPH (2,2-diphenyl-1-picryl hydrazyl) and ABTS (2,2-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid) assays. The ‘Gineş’ cultivar had the highest level of radical scavenging activity, while the ‘Ciklap’ cultivar had the lowest. The total phenolic content of leaf extracts was in the range of 172.66–483.33 µg GAE/mg DW. Grapevine leaf extracts were examined in terms of 15 different elements. The most abundant element in varieties of grapevine leaves was potassium, and its concentration varied between 5208.83 and 13,586.49 mg/kg. The results indicated that V. vinifera L. leaves had strong antioxidant and antibacterial activity, and the varieties of grapevine had a significant impact on these parameters (p < 0.001). Mineral and trace element contents were also significantly affected by cultivars (p < 0.05).

- MakaleYalnız künye2016Scopus SJRQ3Organic acids, sugars and mineral content of cherry laurel (laurocerasus officinalis roem) accessions in Turkey
Esringu, Aslihan; Akšić, Milica Fotirić; Ercisli, Sezai; Okatan, Volkan; Gozlekci, Adiye; Cakir, Ozlem
In this study we report on the content of organic acids, sugars and miner-als in the pulps of the twelve cherry laurel accessions most commonly consumedin eastern Black Sea Region. Malic acid was the dominant organic acid rangedfrom 43.27 (CL6) to 54.23 (CL3) mg/100 g fresh weight basis. The dominantsugars were glucose and fructose in the pulps that ranged from 4.83 (CL1) to5.74 (CL5) mg/100 g and 4.66 (CL3) to 5.53 (CL7) mg/100 g, respectively. Thepulp of cherry laurel was shown to be rich in potassium (187-241 mg), phos-phorus (26-45 mg), calcium (15-22 mg), magnesium (15-24 mg) and sodium(3.9-6.1 mg) in 100 g fruit pulp. The data may be useful in selecting wild ediblefruit species appropriate for incorporation into diets.
