Hasar, Ugur Cem; Korkmaz, Huseyin; Kaya, Yunus; Iliev, Teodor
An attractive microwave free-space method is proposed for permittivity extraction of soil samples using calibration-free time-domain measurements. Different from other similar methods in the literature which use the layer-stripping approach in the forward direction in the extraction process, its formalism is based on the layer-stripping approach in the backward direction, whereby allowing extraction of permittivity from interfacial reflection coefficient only without resorting to any thickness information, especially useful for time-domain analysis of multilayer structures having multiple reflection terms. Effects of angle misalignment, loss, and surface roughness on the extraction performance of the proposed method (PM) are analyzed by numerical examples. Permittivity measurements of three low-loss flat solid samples [polypropylene (PP), polyethylene (PE), and polyoxymethylene (POM)] were first performed by a free-space setup operating over 1–18-GHz frequency range to validate our methodology and compare its accuracy against other similar methods in the literature. Thereafter, permittivity measurements of two soil samples sieved with similar and different sizes (coarse- and fine-grained soil samples) by the same free-space setup were then considered to assess the applicability and performance of our method for electromagnetic property analysis of homogeneous and partially inhomogeneous soil samples.

Kutlu, Naciye; Pandiselvam, Ravi
Roasting is a process that involves heat treatment to improve the digestibility, flavor and sensory aspects of foods and to provide the desired structural changes in the food product. In the microwave roasting method, the heat treatment applied to food products uses microwave energy. When this method is applied with the right temperature-time combination, it has many advantages, such as shorter processing time, energy efficiency, preserving the color components and nutritional quality to a large extent, prevention of the formation of acrylamide to a large extent and offering easy process control compared to traditional methods (roasting in pan, sand or oven), and therefore it has come to the fore in recent studies. With appropriate optimization studies, the negative effects of the microwave method will be minimized. Studies are needed to adapt the microwave roasting method on an industrial scale. Designing new devices which can use artificial intelligence for microwave roasting, an innovative and economical method, is among research expectations for the future.

The aim of this study was to optimize drying conditions during ultrasonic-assisted osmotic dehydration and subsequent microwave drying of red beetroot using the Box-Behnken design. For this purpose, ultrasonic-assisted osmotic dehydration was performed at different ultrasonic powers (50, 75, and 100 W), sonication times (20, 40, and 60 min), and salt concentrations (0%, 15%, and 30%). The subsequent drying procedures were conducted with 231, 518, and 805 W microwave power. The best condition was selected as 5.15% salt concentration, 20 min sonication time, 50 W ultrasonic power, and 716.45 W microwave power. The responses obtained under optimum conditions were determined as 68.06%, 9.54 mg GAE/g dm, 28.23, 42.66, and 3.08 for DPPH• % inhibition, total phenolic content, L*, a*, and b* values, respectively. While favorable impacts on color were detected for the applied pretreatments, the DPPH• scavenging activities of the dried beetroot were determined to be more significant after ultrasonic-assisted osmotic dehydration. Furthermore, the drying kinetics of beetroot were evaluated according to the Midilli et al. model. When the fit to the model was investigated, it was compatible at R2> 0.90 level. As a result, the ultrasonic-assisted osmotic dehydration pretreatment performed before the microwave drying method preserved the quality characteristics of beetroot samples and was successfully applied.

Walayat, Noman; Yurdunuseven-Yıldız, Aysun; Kumar, Manoj; Goksen, Gulden; Öztekin, Sebahat; Lorenzo, José Manuel
Vegetable oils are extracted from oilseeds, fruits and other parts of plants. The method used in oil extraction is of great importance, as it affects both the quality of the final product and the environment. It is desirable that the extraction method be minimally costly, fast, environmentally friendly, and produce oil of high quality and quantity. Common oil extraction methods are mechanical pressing and solvent extraction, and these methods have advantages and disadvantages over each other. Mechanical extraction and solvent extraction are controversial due to poor product quality and high environmental impacts. This review presents applications where conventional oil extraction processes are assisted by microwave or ultrasound. It is necessary to evaluate the impact of ultrasound and microwave-assisted extraction on the quality of the extracted oil and also to compare the results with those of conventional extraction methods. For this purpose, this review discusses the effects of microwave and ultrasound-assisted extraction on the physicochemical, oxidation indices, bioactive compounds, and antioxidant properties of oil extracted from oil seeds and fruits. Furthermore, this review provides readers with in-depth information on the mechanisms involved, their use, and the impact of operating conditions. The yield and quality of the oil obtained by these processes can vary depending on parameters such as microwave power, ultrasound power, processing time, and temperature. Finally, the review also discusses the challenges and advantages of the industrial application of these technologies.

- MakaleAçık Erişim2023Scopus SJRQ2The Effect of Different Drying Methods on Bioactive and Nutrition Contents of Bee Bread and Mathematical Modeling of Drying Characteristics
Kutlu, Naciye; Gercek, Yusuf Can; Bayram, Nesrin Ecem
In this study, the aim was to determine the effect of different drying methods (with microwave and hot air) on the color, nutrient and bioactive contents of fresh bee bread. Drying characteristics were also investigated. Microwave and hot air drying were applied at different microwave powers and temperatures, respectively. Lower moisture ratios and highest effective diffusion coefficients were obtained with microwave drying in a shorter time. The Midilli model was found to be the most suitable thin-layer drying model for both methods. Regardless of the drying conditions, moisture, ash, protein, carbohydrate, and lipid proportions were observed to vary in the ranges of 4.9–8.2 %, 1.61–2.67 %, 17.47–32.54 %, 39.92–60.84 %, and 7.10–8.89 %, respectively. The lowest color difference was obtained for the sample dried at 210 W. As a result, it was determined that microwave drying is more suitable for preserving the nutritional and bioactive content of bee bread during drying.

- MakaleAçık Erişim2019Effects of Forced-Air Oven, Microwave and Halogen Lamp Roasting on Salmonella Inactivation an Some Physicochemical Characteristics in Sesame Seed
Sert, Durmus; Mercan, Emin
This research evaluated the efficacy of forced-air oven. halogen lamp and microwave roasting to inactivate 3 serotypes of Salmonella (S. Typhimurium, S. Newport and S. Montevideo) in sesame seeds. Also, weight loss. textural properties (hardness), water activity and color values of sesame seeds were investigated during the roasting processes. Microwave and halogen roasting inactivated completely Salmonella in sesame seeds which inoculated with 5.9 log cfu/g after 4 and 9 min, respectively. However, forced air oven roasting for 15 min achieved 2.0 log decrease in Salmonella. Halogen and microwave rapidly reduced hardness and a(w) values of sesame seeds compared to forced air oven. Weight loss of sesame seed in halogen and microwave roasting processes was faster than that of forced air oven. Color properties of sesame seeds were significantly affected by roasting methods. The results showed that halogen and microwave roasting can significantly minimize the risk associated with Salmonella in sesame seeds. Also. applications of halogen and microwave significantly decreased the roasting time as compared to forced-air oven.

Karcioʇlu Karakaş, Zeynep; Boncukcuoʇlu, Recep; Karakaş, Ibrahim Hakki; Ertuʇrul, Mehmet
NiFe2O4nanoparticles were synthesized using the microwave assisted combustion method based on metal nitrate salts and urea. To remain of organic matters and to stabilize the particles, samples were thermally treated at various temperatures from 300-800 °C. The prepared samples were characterized by X-ray diffraction (XRD), transmission electron microscopy (TEM), scanning electron microscopy (SEM), energy dispersive X-ray spectroscopy (EDX) thermogravimetric analysis (TGA) and vibrating sample magnetometry (VSM). The heat treated samples show the reflection planes of (111), (220), (222), (311), (400), (422), (511), and (440) which perfectly confirm to a cubic spinel phase of NiFe2O4and no secondary phases were detected in the XRD patterns of the samples. The crystallite sizes calculated using the Debye-Scherrer formula were found to increase with the heat treatment temperature, from about 4 nm at 300 °C-85 nm at 800 °C. EDX results verify that the compositional mass rations were relevant, as expected from the synthesis. The micrographs of SEM and TEM showed that all of the samples have nano-crystalline behavior and particles indication cubic shape. Magnetization measurements were obtained at room temperature by using a VSM, which demonstrated that the all of the samples synthesized with heat treatment exhibited ferromagnetic behaviors.

In this study, metallophthalocyanines 4, 5, 6 was carried out by the cyclotetramerization of 4-{3-[(2E)-3-(3,4,5-trimethoxyphenyl)prop-2-enoyl] phenoxy}phthalonitrile 3. The synthesis of metallo derivatives [Zn(II), Co(II), Cu(II)] of phthalocyanines obtained from corresponding phthalonitrile derivative and in the presence of the anhydrous divalent metal salts (Zn(CH 3COO)2, CoCl2 and CuCl2) was described. These phthalocyanines showed good solubility in organic solvents such as chloroform, tetrahydrofuran, DMSO and DMF. The newly synthesized Pcs were verified by IR, 1H NMR, 13C NMR, UV-vis and MS spectral data. The electrochemical properties of the zinc(II), copper(II) and cobalt(II) phthalocyanines were investigated by cyclic voltammetry (CV) and differential pulse voltammetry (DPV) methods. The cobalt complex showed a metal based reduction process, while zinc phthalocyanines were giving ligand based electron transfer processes.
