Influence of Salt Type on the Physicochemical, Microbiological, Sensory Properties, Mineral, Free Fatty Acid, and Volatile Composition of PDO Erzincan Tulum Cheese

    Arslaner, Ayla; Yılmaz, Özlem

This study evaluated the quality attributes of Protected Designation of Origin (PDO) Erzincan Tulum cheese by comparing control cheeses made with Kemah spring salt (KS) to those made with Sivas spring salt (SS), Çankırı rock salt (CS), and a low-sodium salt (rock salt–KCl blend, 50:50, LNaS). Cheeses were ripened at −2 to 0 °C for 120 days. Analyses included chemical composition, mineral profile, proteolysis, lipolysis, fatty acid composition, volatile compounds, and sensory properties. During ripening, dry matter and pH increased significantly (p < 0.05). Mineral content varied by salt type: LNaS had higher potassium and lower sodium, KS-C had the highest sodium and phosphorus, and SS-C the highest magnesium (p < 0.05). Proteolysis increased in all samples, with the highest levels in LNaS (p < 0.05). Lipolysis increased in all samples (p < 0.05), with CS-C showing the highest free fatty acid (FFA) content. Fifty volatile compounds were identified; carbonyl compounds were highest in LNaS-C and esters were highest in SS-C. Sensory evaluation showed that CS-C had the highest overall acceptability score and SS-C the lowest (p < 0.05). CS-C outperformed the control in sensory quality, and LNaS-C achieved similar sensory acceptance without compromising quality. Salt content and type were identified as critical factors in determining the authenticity of PDO Erzincan Tulum cheese.

Screening of plant pollen sources, polyphenolic compounds, fatty acids and antioxidant/antimicrobial activity from bee pollen

Gercek, Yusuf Can; Celik, Saffet; Bayram, And Sinan

In this study, the botanical origin, total flavonoid and phenolic content, antioxidant activity, phenolic profile and fatty acid composition of mixed bee pollen loads collected in Bayburt, Turkey, were determined. In addition to these assays, antibacterial activity of bee-collected pollen extract (BCPE) against a variety of food-borne pathogenic bacteria was determined in vitro. Pollen loads were classified into five botanical families based on their color: Asteraceae, Fabaceae, Campanulaceae, Cistaceae and Rosaceae. Total flavonoid, total phenolic, CUPRAC and CERAC concentrations were 173.52 mg GAE/g, 79.21 mg QE/g, 85.59 mg Trolox/g and 118.13 mg Trolox/g, respectively. Twenty-three phenolic compounds were scanned in bee pollen extract by LC-MS/MS, with rutin being the most abundant. Cis-4,7,10,13,16,19 docosahexaenoic acid was the predominant fatty acid, followed by cis-11-eicosenoic acid, palmitic acid, and alfa linolenic acid. In addition, the agar well diffusion (AWD) and micro-broth dilution methods were used to determine of the antibacterial activity of the BCPE sample. MIC values were observed to vary between 2.5–5 mg/mL for Gram-positive bacteria and 5–10 mg/mL for Gram-negative bacteria. These findings indicate that bee pollen could be a potential source of antioxidants and antimicrobials.

Changes of some bioactive and physicochemical properties during the black tea processing

Balaban, Osman Tolga; Kamiloğlu, Aybike; Kara, Hasan Hüseyin

Abstract: In this research, some physical and bioactive properties of tea samples collected from every processing stage of black tea production were investigated. The processing stages were significantly effective on the investigated properties (moisture content, color parameters [L*, a*, and b*], and pH values the total phenolic substance, antioxidant activity) (p < 0.01). The antioxidant activities were found to be at a high level in fresh tea but decreased during the processing stages. Furthermore, the lowest activity was observed in the drying stage for extracts prepared with water and in the drying and sorting stages for extracts prepared with ethanol. In addition, it was determined that palmitic acid, myristic acid, and capric acid as saturated fatty acids, oleic acid, heptadecenoic acid, and eicosenoic acid as unsaturated fatty acids formed the fatty acid profile. Palmitic acid was determined to be the dominant fatty acid in tea samples. Practical Application: Tea is a beverage known to have positive health effects. The chemical structure of tea is very effective in providing these positive effects on health. Black tea production takes place in five stages in general terms (withering, rolling, oxidation, drying, and sorting stages) after the harvesting. These processes are very effective in the quality properties of tea. This research provides information about effects of processing stages on black tea. Our results demonstrate that processing was significantly effective on the physicochemical and bioactive properties of tea. Functionality of bioactive compounds could be maintained by optimization of the applied processes.

Fatty acid compositions and quality of egg and performance in laying quails fed diet with hesperidin

Özbilgin, Abdullah; Kara, Kanber; Gümüş, Recep; Tekçe, Emre

This study investigates the effects of hesperidin on eggs’ internal and external quality parameters, the fatty acid in egg yolk, and the nutrient content adding different amounts of hesperidin to the quail diets. A total of 150 Japanese quails (Coturnix coturnix japonica) were divided into three groups (0% hesperidin group (n = 5 × 10) (control group; HES0), 0.1% hesperidin group (HES1), and 0.2% hesperidin group (HES2)) with five replicates. It has been found in the analysis that hesperidin did not affect the weight and thickness of the shell from the external quality parameters of the egg (P > 0.05), but in terms of the HES1 and HES2 groups, the weight of the egg increased compared to the HES0 group, while the fracture resistance of the shell decreased (P < 0.05). Eggs’ internal quality parameters have shown that the egg white width (P < 0.05) and the yolk diameter (P < 0.01) increased in the HES1 and HES2 groups, and the length of white decreased (P < 0.05). It has been found that n-6 (linoleic acid) and n-3 (docosahexaenoic acid) fatty acid values increased significantly according to hesperidin dosage (P < 0.05) from the parameters of the composition of fatty acids of the eggs. As a result, it is believed that hesperidin added to the diet has a generally positive effect on the fatty acid composition and internal and external quality parameters of the eggs and would be appropriate to use it as a feed additive.

Turkish royal jelly: amino acid, physicochemical, antioxidant, multi-elemental, antibacterial and fingerprint profiles by analytical techniques combined with chemometrics

Ecem Bayram, Nesrin; Çebi, Nur; Çelik, Saffet; Gerçek, Yusuf Can; Bayram, Sinan; Tanugur Samanci, Asli Elif; Sagdiç, Osman; Özkök, Asli

Royal jelly is one of the most remarkable commercial bee products used in cosmetics, medicine, and as a dietary supplement. This study aimed to determine some quality parameters (amino acid, multi-elemental, total phenolic-flavonoid, 10-HDA, sugar, and moisture content) as well as antioxidant and antimicrobial activities of different royal jelly samples (domestic and non-domestic samples). In this study, royal jelly samples exhibited high antioxidant and antimicrobial activity. 10-HDA values were found to be higher in domestic royal jelly samples (2.17-2.71%) compared to non-domestic samples (0.31-1.71%). Also, it was found that the acidity value varied between 2.57-3.37 mL 0.1 N NaOH/g and 3.87-4.97 mL 0.1 N NaOH/g in non-domestic and domestic royal jelly samples, respectively. L-Proline was the amino acid with the highest rate of occurrence in both domestic (21972.39-35053.00 nmol/g) and non-domestic (19688.31-21711.50 nmol/g) samples. It was determined that the new method developed for amino acid analysis has many advantages over other methods. Chemometrics of principal component analysis (PCA) showed that amino acid profile, elemental profile, and chemical parameters were capable of presenting characteristic and descriptive properties of royal jelly samples. In addition to these findings, Raman spectroscopy combined with chemometrics of hierarchical cluster analysis (HCA) was successfully used to distinguish domestic and non-domestic royal jelly samples. The obtained results will provide an important basis for subsequent research on the evaluation of the amino acid content, physicochemical properties, phenolic content, and the antioxidant and elemental profile of royal jelly.

Fatty acid composition of sunflower seeds from different locations in the north of Turkey

    Gul, Volkan

Because of sunflower is well adapted to the conditions of all region types, it ranks the first in terms of vegetable oil production in our country. The content of fatty acids that determine the quality of sunflower oil is affected by factors such as genotype and environment, especially climate and soil struc-ture. This research examines the oil and fatty acid ratios of sunflower grains grown on a producer basis and presented to the market in 2015 in Samsun (Bafra, Vezirkopru and Havza), Amasya (Merzifon), Corum (Center) and Tokat (Turhal) in the Middle Black Sea Region selected according to the density of oil sunflower to determine the quality of oil. According to the results of the research, average fat ratio was found to be between 41.57% and 45.67%, palmitic and stearic acids, which are basic saturated fatty acids, between 5.65% and 6.44% and from 3.84% and 4.81% linoleic acid (omega 6), linolenic acid (omega 3) and oleic acids (omega 9), which are unsaturated fatty acids, were found between 50.33 and 63.42%, 0.24 and 0.29% and 25.32 and 37.50%, respectively. These results indicate that the sun-flower seeds cultivated in the Amasya-Merzifon re-gion are at the forefront due to their oil quality char- A cteristics.
