Carotenoids, vitamins, and minerals have vital roles for living organisms, yet they often remain underutilized due to their poor solubility, limited stability, and low bioavailability. Thanks to electrospraying technology, innovative solutions are available to overcome these challenges compared to conventional delivery systems. Therefore, this book chapter provides comprehensive information on the principles, mechanisms, electrospraying techniques, effective parameters on particle formation and properties, regulatory aspects, and in vitro/in vivo particle delivery systems of electrosprayed carotenoids, vitamins, and minerals. The chapter is structured into five main sections. The first section gives a brief introduction to electrospraying technology and electrosprayed particles. In the second section, the focus shifts to the fundamentals of electrospray technology and detailing their underlying principles, types, and parameters. The third section delves into the specific uses of electrospraying for xbiotics, phenolic and nonphenolic compounds, with particular emphasis on the applications of electrospraying for the encapsulation of carotenoids and minerals, carotenoids, and taste-related compounds. This section also related to the impact of electrospraying on seafood quality as a good example. The fourth section provides an in-depth analysis of the stability, absorption, and bioavailability improvements of electrosprayed particle delivery systems through in vitro and in vivo studies. The final section addresses regulatory considerations, safety, and future perspectives. It reviews the current regulatory landscape for food additives and dietary supplements, emphasizing the compliance requirements for novel electrosprayed delivery systems. Through detailed scientific insights and practical applications, this chapter paves the way for innovative approaches to electrosprayed particles for improved delivery of carotenoids, vitamins, and minerals.

Food color is a feature that provides preliminary information about their preference or consumption. There are dominant pigments that determine the color of each food; the most important pigments are anthocyanins (red–purple color), chlorophylls (green color), carotenoids (yellow-orange color), and betalains (red color). These pigments can be easily affected by temperature, light, oxygen, or pH, thereby altering their properties. Therefore, while processing, it is necessary to prevent the deterioration of these pigments to the maximum possible extent. Ultrasonication, which is one of the emerging non-thermal methods, has multidimensional applications in the food industry. The present review collates information on various aspects of ultrasonication technology, its mechanism of action, influencing factors, and the competence of different ultrasonication applications (drying, irradiation, extraction, pasteurization, cooking, tempering, etc.) in preserving the color of food. It was concluded that ultrasonication treatments provide low-temperature processing at a short time, which positively influences the color properties. However, selecting optimum ultrasonic processing conditions (frequency, power, time, etc.) is crucial for each food to obtain the best color. The key challenges and limitations of the technique and possible future applications are also covered in the paper, serving as a touchstone for further research in this area.

- MakaleYalnız künye2017Scopus SJRQ4Bioactive content of Rosa canina biotypes from Turkey
Beyhan, O.; Koc, A.; Ercisli, S.; Jurikova, T.; Cakir, O.
Rose hips have been used as medicinal and aromatic plants for a long time throughout Turkey. The plant has been the focus of many recent studies due to its potential effects on treatment and prevention of several diseases. However, there are few in vitro studies concerning its composition and antioxidant capacity. The aim of the present study was to determine bioactive content including ascorbic acid, total phenolics, total flavonoids, total carotenoids and antioxidant activity of Rosa canina biotypes growing wild in Sivas province located eastern Anatolia. The results revealed that fruits of Rosa canina biotypes rich in terms of Vitamin C which ranged from 360 to 482 mg/100 g fresh weight base. The total phenolic content varied from 340 to 464 mg/100 g fresh weight. The biotype S-07 had the highest total flavonoids content (241 mg quercetin equivalent/100 g fresh weight) and the lowest value attributed to biotype S-01 as 151 mg/quercetin equivalent/100 g fresh weight. The antioxidant activity of the biotypes was between 14.2-30.7 μg Trolox/ml sample. The results revealed that there was enough diversity among Rosa canina biotypes for bioactive content and promising biotypes with high bioactive content are ready material for future breeding activities.

A rose hip is the fruit of a rose plant and mostly belongs to Rosa canina and Rosa dumalis. These species are genuine found as wild in natural conditions, while in some countries are cultivated for their hips that are picked and used in a wide variety of preparations. Because they contain a variety of antioxidants, carotenoids, flavonoids, polyphenols, leucoanthocyanins and catechins, rose hips are considered to be a good cancer preventative. The Rosa genus has been the focus of many recent studies due to its potential benefic effects on treatment and prevention of several diseases. However, there are few in vitro studies concerning its composition and antioxidant capacity. The aim of the present study was to determine bioactive content, including ascorbic acid, total phenolics, total flavonoids, total carotenoids and antioxidant activity of Rosa dumalis genotypes growing wild in Erzurum province located eastern Anatolia. The results revealed that fruits of Rosa dumalis different genotypes were rich rich in terms of vitamin C, which ranged from 402 to 511 mg/100 g fresh weight base. The total phenolic content varied from 297 to 403 mg/100 g fresh weight. The genotype 'E-09' had the highest total flavonoids content (229 mg quercetin equivalent/100 g fresh weight) and the lowest value was attributed to genotype 'E-04' with 143 mg/ quercetin equivalent/100 g fresh weight. The antioxidant activity of the genotypes was between 12.9-28.6 μg Trolox/ml samples. The results revealed that there was enough diversity among Rosa dumalis genotypes for bioactive content and promising genotypes, with high bioactive content, were determined, which can become study material for future breeding activities.
