This study aimed to investigate the physicochemical and textural characteristics of bread produced from doughs composed of high-pressure homogenization (HPH) treated flour slurries. For this purpose, bread samples were produced from doughs composed of HPH treated flour slurries at 0 (control), 20, 30, 50, and 70 MPa. HPH treatment resulted in decreased particle size with more uniformity in flour slurries. A monomodal particle size distribution was determined in slurries. HPH obtained higher firmness, consistency, and cohesivity in slurries. In bread samples, HPH increased yellowness and lightness values. The bread samples prepared from HPH treatment had 1.09–1.25 times higher specific volumes than the control sample. HPH treatment provided decreased hardness and increased cohesiveness and springiness values. Image analysis results showed HPH treatment decreased total cell count, whereas increased mean cell area of bread samples. The findings revealed that HPH treatment results in higher quality bread compared to control.

- MakaleYalnız künye2018Scopus SJRQ2X-ray CT monitoring of macro void development in mortars exposed to sulfate attack
Tekin, Ilker; Birgul, Recep; Aruntas, Huseyin Y.
This study reports the results of nondestructive monitoring of macro void developments in mortars manufactured with both ordinary Portland cement and sulfate resistant cement. Two types of curing were utilized; tap water curing and another curing environment that contains 5% Na2(SO4) solution. Being the primary objective of this study, macro void developments of the mortar specimens were monitored by X-ray Medical Computerized Tomography. Compressive strength tests and water absorption tests were conducted on specimens that were kept in both curing environments for a duration of 560 days. Data analyses yielded consistent results among the three tests used in this experimental study. Macro void ratios of mortars decreased at the beginning of experiments for a certain period; afterwards, macro void ratios increased. The objective of this study was accomplished as anticipated since X-CT image analysis was able to nondestructively monitor macro void development process in cement mortars.

The aim of this paper is to expand the body of knowledge about the silicon doped gallium nitride thin films deposited on different substrates. The physical properties of the Si doped GaN thin films deposited on the glass and polyethylene terephthalate substrates by thermionic vacuum arc which is plasma production technique were investigated. Thermionic vacuum arc method is a method of producing pure material plasma. The Si doped GaN thin films were analyzed using the following methods and the devices: atomic force microscopy, X-ray diffraction device, spectroscopic ellipsometer and energy dispersive X-ray spectroscopy detector. The produced Si doped GaN thin films are in the (113) orientation. The thicknesses and refractive index were determined by using Cauchy dispersion model. Surface morphologies of produced thin films are homogenous and low roughness. Our analysis showed that the thermionic vacuum arc method present important advantages for optical and industrial applications.

- MakaleYalnız künye2012Scopus SJRQ1Determination of the effect of volcanic pumice replacement on macro void development for blended cement mortars by computerized tomography
Tekin, Ilker; Birgul, Recep; Aruntas, Huseyin Yilmaz
In this study, the effect of volcanic pumice replacements with different ratios on the macro void development was observed using CT for a period of 100 days. The cured mortar specimens were imaged by X-ray CT on different days of the experiment. Utilizing Hounsfield Unit values as guides, void volumes and ratios were identified and measured by Matlab software. SEM images supported the X-ray CT results. It is shown that X-ray CT analysis is capable of assessing the development of macro voids in the mortar specimens.
