Özet

It is stated that grape seed contains about 10-20% oil. Unsaturated fatty acids such as linoleic and oleic acid, especially with the high rate of antioxidants, show that grape seed oil should be processed as a by-product and its economic importance. In addition, it is used in cosmetic and pharmaceutical industry with the antioxidant substances it contains. In this study, the fatty acids composition of Kalecik Karası seed oil grown in Çorum ecology was determined by using GS-MS. Linoleic acid and linolenic acid values were found 0.91% and 0.21%, respectively. In addition the butyric acid content was determined as 50.83%. Butyric acid is one of the important fatty acids that can be used in nutrition because of its inhibitory and curative effect in intestinal diseases. It is thought that it will be possible to determine the usage areas of vegetable oils by illuminating the fatty acids content and thus the production methods can be grouped. The grape kernels, which are produced as a by-product from pressed or processed grapes used as raw materials for the first product such as fruit juice, molasses and wine, reveal the idea that grape seed oil can be used in the production of grape seed oil which has a higher economic yield in addition to pulp and feed production. The fatty acids it contains indicate that grape seed oil is suitable for use as edible oil.
