Arslaner, Ayla; Yücetepe, Aysun; Akköse, Ahmet
The present study investigated the effect of adding chokeberry sauce (CS) from different cultivars (Nero and Viking) on specific quality attributes, total phenolic contents, antioxidant activity, textural qualities, sugar profile, probiotic shelf life, and sensory properties of probiotic yogurts, which were assessed throughout 21 days of cold storage. The results revealed that CS decreased fat, hardness, adhesiveness, and gumminess while increasing ash, total sugar, dry matter, and total calories. From Day 1 to Day 14 of storage, the pH values of CS-added samples significantly decreased (p < 0.01), whereas those in the control remained unchanged (Ky: 0% CS). The springiness and cohesiveness values of the Ky and Vy (20% Viking-CS) samples were comparable. During storage, CS-added yogurt samples’ water-holding capacity (WHC) was significantly higher than that of the control (p < 0.01). Interestingly, yogurt samples showed a notable rise in viscosity up to 14 days of storage, after which they slightly reduced. Ny (20% Nero-CS) and Vy samples exhibited higher red-blue hues than Ky. Vy had greater Lactobacillus acidophilus La-5 survival rates (99.28%) than Ny (99.04%). CS-added samples exhibited significantly higher antioxidant activity, total phenolic content, and total monomeric anthocyanin content compared to Ky; Vy also had the highest values (p < 0.05). Vy showed relatively high scores regarding organoleptic properties, including appearance, taste, texture and consistency, fruit ratio, overall acceptability, and average score. These indicators could help develop a healthier, low-calorie probiotic CS-added yogurt that competes with natural fruit-added yogurt.

Kutlu, Naciye; Pandiselvam, Ravi; Saka, Irem; Kamiloglu, Aybike; Sahni, Prashant; Kothakota, Anjineyulu
Electromagnetic waves are frequently used for food processing with commercial or domestic type microwave ovens at present. Microwaves cause molecular movement by the migration of ionic particles or rotation of dipolar particles. Considering the potential applications of microwave technique in food industry, it is seen that microwaves have many advantages such as saving time, better final product quality (more taste, color, and nutritional value), and rapid heat generation. Although microwave treatment used for food processing with developing technologies have a positive effect in terms of time, energy, or nutrient value, it is also very important to what extent they affect the textural properties of the food that they apply to. For this purpose, in this study, it has been investigated that the effects of commonly used microwave treatments such as drying, heating, baking, cooking, thawing, toasting, blanching, frying, and sterilization on the textural properties of food. In addition, this study has also covered the challenges of microwave treatments and future work. In conclusion, microwave treatments cause energy saving due to a short processing time. Therefore, it can be said that it affects the textural properties positively. However, it is important that the microwave processing conditions used are chosen appropriately for each food material.

The aim of this study was to investigate effects of addition of B. animalis BB-12 (before tempering, BT or after tempering, AT) and inulin (6, 8, and 10%) on thermal, physicochemical characteristics, fatty acid composition, textural properties and probiotic viability of milk chocolates during 60 days of storage. The free fatty acid (FFA) value of milk chocolates ranged from 0.66 to 0.89 (% oleic acid), in which higher ratio of inulin addition increased the FFA. Probiotics and inulin addition increased darkness of chocolates when compared to control. D[4,3] value of samples ranged from 9.26-17.97 mu m. Higher inulin ratio in chocolates increased viscosity and yield value. These values in the group BT were higher than those of the group AT. BB-12 count of probiotic and synbiotic samples ranged from 7.09-8.06 log cfu/g during the storage. Higher inulin ratio increased the probiotics count in samples. Probiotic addition after tempering increased the count of probiotic and improved viability at the end of storage. The results showed that B. animalis BB-12 is capable of surviving in milk chocolate, at an appropriate bacteria count (>107 cfu/g), up to 60 days of storage at 18 degrees C.

Sert, Durmuş; Mercan, Emin; Tongur, Aymelek; Kara, Ümmügülsüm
This study aimed to investigate the physicochemical and textural characteristics of bread produced from doughs composed of high-pressure homogenization (HPH) treated flour slurries. For this purpose, bread samples were produced from doughs composed of HPH treated flour slurries at 0 (control), 20, 30, 50, and 70 MPa. HPH treatment resulted in decreased particle size with more uniformity in flour slurries. A monomodal particle size distribution was determined in slurries. HPH obtained higher firmness, consistency, and cohesivity in slurries. In bread samples, HPH increased yellowness and lightness values. The bread samples prepared from HPH treatment had 1.09–1.25 times higher specific volumes than the control sample. HPH treatment provided decreased hardness and increased cohesiveness and springiness values. Image analysis results showed HPH treatment decreased total cell count, whereas increased mean cell area of bread samples. The findings revealed that HPH treatment results in higher quality bread compared to control.

In this work, the role of in situ exopolysaccharide (EPS) production under different fermentation conditions on physicochemical, microbiological, textural and microstructural properties of sucuk was determined. For this purpose, the effect of EPS producing strains (control, strain 1, strain 2 and mixture) and fermentation conditions (fermentation temperature; 14, 16 and 18 °C and time; 8, 12 and 16 days) on physicochemical, microbiological, textural and microstructural properties were investigated using response surface methodology. In situ EPS production was observed to remarkably affect these properties while fermentation conditions were also seen to dominantly influence the physicochemical properties of sucuk, revealing that the ripening temperature appeared to be more determinant factor. EPS producing cultures enhanced the textural properties of sucuk which became harder, less adhesive and tougher. The microstructural analysis revealed the formation of web-like structure by in situ EPS production in sucuk mix during fermentation process. This study revealed the importance of in situ EPS production on final technological properties of sucuk.
