Response of probiotics and yeast added in different doses to rations of anatolian merino lambs on fattening performance, meat quality, duodenum and rumen histology[1]; [Z anadolu merinos kuzularının rasyonlarına farklı dozlarda ilave edilen probiyotiklerin ve mayanın besi performansı, et kalitesi, rumen ve duodenum üzerine yanıtı]

Tekce, Emre; Bayraktar, Bülent; Aksakal, Vecihi; Dertli, Enes; Kamiloğlu, Aybike; Karaalp, Musa; Timurkaan, Sema; Gül, Mehmet

This study investigated the effects of dietary probiotics (Lactobacillus reuteri E81 [LRE], Lactobacillus rhamnosus GG [LRG]), yeast (Saccharomyces cerevisiae S81 [SCS]), and their combined supplementation on fattening performance (BW, DWG, FI, and FCR), meat quality, and rumen and duodenum histology in lambs. The study material comprised ninety 2.5-month-old Anatolian Merino lambs, and the trial was conducted for 70 days. Nine trial groups, each composed of 10 animals, were established. This study demonstrated that, when compared to the control group, the best fattening performance was achieved in the lambs that received 600 ppm of dietary LRE. Neither visceral organ weights nor rumen and duodenum histology was affected in the groups that received the tested feed supplements. Of the meat colour parameters investigated, the L* value was observed to have increased in the groups that were given feed supplements, excluding Groups LRE-600 and SCS-300. It was determined that the probiotic supplements had no effect on the a* and b* colour parameters, but affected the meat pH value. In conclusion, the assessment of the effects of different doses of dietary probiotics, yeast, and probiotic-yeast combinations on performance parameters, visceral organ weights, and meat quality in Anatolian Merino lambs showed that the best results were achieved in the group that received 600 ppm of LRE alone.

Genotypic identification of lactic acid bacteria in pastirma produced with different curing processes; [Farklı kürleme İşlemleri İle üretilen pastırmada laktik asit bakterilerinin genotipik İdentifikasyonu]

Çınar, Kübra; Fettahoğlu, Kübra; Kaban, Güzin

The lactic acid bacteria isolated from pastirma, produced under controlled conditions using two different curing temperatures (4°C or 10°C) and two different curing agents (150 mg/kg sodium nitrite or 300 mg/kg potassium nitrate), were subjected to genotypic (16S rRNA sequecing) identification. According to the identification results, 68 of 87 isolates (78.16%) was identified as Pediococcus pentosaceus. This species was followed by P. acidilactici (14.94%), Lactobacillus sakei (4.60%) and L. plantarum (2.30%), respectively. P. pentosaceus was dominant species in all curing applications (4°C/nitrate or nitrite or 10°C/nitrate or nitrite). Another species determined in all groups was P. acidilactici. While L. plantarum was only isolated from samples produced with nitrate (4°C or 10°C), L. sakei was isolated from samples produced with nitrite (4°C or 10°C). The effect of the curing agent on the biodiversity of lactic acid bacteria in pastirma was more effective than the curing temperature.

The antioxidant activity, vitamin c contents, physical, chemical and sensory properties of ice cream supplemented with cornelian cherry (Cornus mas L.) paste; [Kızılcık (Cornus mas L.) ezmesi ılaveli dondurmanın antioksidan aktivitesi, C Vitamini ıçeriği, fiziksel, kimyasal ve duyusal özellikleri]

Topdaş, Elif Feyza; Çakmakçi, Songül; Çakiroğlu, Kübra

The aim of this research was to investigate the effect of cornelian cherry (Cornus mas L.) paste (CP) on the quality properties of ice cream. CP was added to an ice cream mix at four concentrations (0, 5, 10 and 15%, w/w) for ice cream production. The increment of CP level caused the increased of vitamin C content, a values and overrun values, whereas it decreased the viscosity of samples compared to Control ice cream sample. The results indicated that lyophilised water extracts of CP (LWECP) contain remarkable phenolic compounds. The findings showed that there is a positive correlation between the total phenolics and flavonoid contents in LWECP and ice cream samples antioxidant activity. CP has shown to be an effective source of natural antioxidants. CP may be used as a source of natural colour and flavour agent in ice cream manufacture. CP enhanced vitamin C amounts of ice cream, and improve sensory properties. In the literature surveys of Science Direct, Web of Science, Google Scholar and Scopus databases an ice cream study using cornelian cherry fruit was not found.

Yoğurttan ekzopolisakkarit üreten streptococcus thermophilus suşunun izolasyonu ve tanımlanması

    Dertli, Enes

Production of exopolysaccharides (EPS) by starter Lactic acid bacteria (LAB) gained special interest due to technological role of thesenatural polymers. Yogurt samples were collected from diferent households in Turkey and bacterial strains were isolated and evaluatedfor EPS production. Strains potentially producing EPS were then identified to species level with 16S rRNA sequencing. An EPS producerStreptecoccus thermophilus strain was identified from yogurt samples. EPS was extracted from culture supernatants of S. thermophilus andpartially purified and structural analysis of the crude EPS by FTIR spectroscopy revealed the presence of typical functional groups relatedto exopolysaccharides. This study explains the identification of a potential starter culture for yogurt production with EPS production.
